Krissy's Best Ever Corn Muffins

Reviewed: Oct. 21, 2007
A nice spin on cornbread, perhaps a tad too sweet for our tastes, but delicious nevertheless. This cornbread is dense and moist and sweet. The honey flavor shone through. I put the batter in an 8x8 pan and baked for an additional 10 minutes (had to use tinfoil for the last 10 minutes to prevent overbrowning). Thank you for the submission.

Applesauce

Reviewed: Oct. 14, 2007
My kitchen smells heavenly! Boyfriend came in from working outside and after one whiff, he couldn't wait to sample this. We both agree, this is a winner! I, too, was a little hesitant about adding the pinch of cloves, but it's the absolute right thing to do. As another reviewer suggested, sample the apples before adding the sugar to determine how much you want to add. Great way to use apples that are no longer crisp for out-of-hand eating. I cannot believe how easy and rewarding this is. Thanks for this submission!

White Chocolate Covered Pretzels

Reviewed: Oct. 7, 2007
Fun, delicious, looks as if I expended a lot of effort, when I didn't. Nice salty, sweet combination. I dried these on a cake rack, but they stuck. A couple broke, but the cook hastily ate the mistake! I think maybe drying them on waxed paper or parchment paper may be a better choice next time. I had enough white chocolate left over to go back and redip pretzels that didn't quite have the coverage I wanted. Thank you for this great submission!

Fabulous French Loaves

Reviewed: Oct. 7, 2007
I tried this recipe because it's a little quicker than my standby French bread recipe. But I am sad at the outcome of this recipe; it just didn't work for me. I didn't get the rise I expected; the dough spread and looked more like foccacia (and yes, my yeast was fresh). The flavor was very good, the crust was beautiful. If I should ever try this again, I think instead of making two loaves, I'll make 4, and make them narrower. To make steam for a crustier crust, I heated a cast iron skillet on a lower rack while preheating my oven. When it was ready, I put in the dough and then added ice cubes into the skillet. Voila! Steam.

Slow Cooker Italian Beef for Sandwiches

Reviewed: Oct. 7, 2007
Fall-off-the-fork tender. Boyfriend loved it, but he is a beef lover. I prefer it over mashed potatoes, like a reviewer before me :) I had a little onion and green pepper left over from another cooking project and added it, didn't put in any added salt. Otherwise, followed the recipe.

Old Fashioned Christmas Raisin Delights

Reviewed: Sep. 30, 2007
In all honesty, I did not use the cookie portion of this recipe as I have a similar raisin-filled cookie recipe where the dough doesn't have to be chilled 3 hrs before being able to use it. I did use the filling recipe, however, and boy is it ever a sweet, eyes-rolled-back-into-your-head filling. Very good indeed! I put my raisins into my blender to grind them, but they quickly became gummy so I added the water, which worked like a charm. You do have to watch it carefully as it will quickly become very soupy. Pulsing with a food processor, if you have one, would probably be an easier choice. A wonderful cookie for those with a sweettooth!

English Muffin Bread

Reviewed: Sep. 29, 2007
Really, a very good English muffin bread. In just under 2 hours I was using this as a foundation to serve Eggs Benedict. A wonderful toothsome texture, that toasted up crisp, with lots of nooks and crannies to hold melted butter or apple butter. Yum! The weather today is quite dry, so I didn't need to use the full measure of flour to make the batter consistency I wanted. There is not a lot of rise to this type of bread (after all there is only one rising and no kneading), so this worked up quickly. I'm at that stage in my life, alas, where I have to reduce salt, and I cut this down to 1/2 tsp. Still very, very good! Many thanks to the submitter :) Far better than anything I could purchase at the market.

Mother's Applesauce Cake

Reviewed: Sep. 16, 2007
Very good, moist, flavorful. I am a spice cake afficionado so I followed the directions as written and am well pleased with the flavor and aroma. I like the addition of the dates; it's a unique twist on applesauce cake. The frosting is perfect for this cake. Thank you submitter for this truly delightful recipe!

Dried Cherry Cake

Reviewed: Sep. 9, 2007
A lovely, charming coffee cake! This baked up so nice and moist, fluffy. I really liked the idea of soaking the cherries with the almond extract; the hint of almond lent a nice flavor. Like another reviewer before me, I used plain sour cream because that's what I had on hand. A nice Sunday morning treat! Thank you for this submission!

Sugar and Spice Bacon

Reviewed: Sep. 9, 2007
Now this was fun; it's so bad for us but it tastes very good. I actually cooked it at a lower temperature to cook along with another dish, 350F for 35 minutes or so. It came out nice and crisp, the bacon kept its shape pretty well. As another reviewer said, I used aluminum foil in my baking pan to save clean up. We'll have this again, I'm sure, but not often. It'll be more of a special, rare breakfast treat.

Neat Sloppy Joes

Reviewed: Aug. 21, 2007
It's been since I was in grammar school that I had sloppy joes and it's a meal that I had long forgotten about until a dear friend recently mentioned it. I had some tomato sauce left over from another project that essentially had the same spices in it. I omitted the ketchup and tomato soup, but otherwise pretty much followed the recipe, if not to the letter at least in spirit! Boyfriend thought these were great, and I agree. This is a meal that we will certainly have again! Thank you for taking the time to submit this recipe; it's very good!

The Best Pizza Crust

Reviewed: Aug. 19, 2007
It's been eons since I've made homemade pizza, and the crust has always been the issue. I'm always looking for that pizza parlor flavor and texture. Yeasty flavor, crispy outside, chewy inside. This crust has a great texture, and made a nice thick crust which browned beautifully; it held up to the toppings I heaped on it and wasn't at all doughy. Prebaking it is absolutely inspired, and I think it made all the difference in the end product. This recipe may be a little more work than others at, but in my estimation, it's worth it.

Blackberry Jam Cake III

Reviewed: Aug. 18, 2007
This is my first experience with any kind of jam cake, and I must say I'm mightily happy. Based on observations of other reviewers who said this cake was "dry" I added a 1/4 c of vegetable oil, and also added 1 c of raisins. I cooked this in a bundt pan for 55 minutes. Cake is delightfully moist and full of spicy aroma and flavor. It doesn't need any kind of frosting, though I suppose a little powdered sugar would be a nice addition. Thank you for this lovely submission!
