Florns' Chinese Steamed Fish

I have made this several times, it works well with snapper, mahi mahi, and orange roughy. I've also used different veggies, and since I like things spicy I add a couple sliced jalapenos.

Maple Dill Carrots

Red Chard and Caramelized Onions

Really good recipe! I cut back a little on the capers and olives per other comments, the original recipe would be good but too salty for me. Some of the stems on my chard were really thick, I cut them off and added to the onions earlier than the leaves.

No-Mayonnaise Ranch Dressing

This was really good, simple, and so much healthier than store bought. I made it yesterday, and today hubby was putting it not only on his salad, but on his green beans too. He doesn't know it's low fat and I'll never tell :)

White Chili with Chicken

I rated this five stars for the taste, but it is really more of a soup than a chili. I read several posts that said this was bland, since we like spicy food I used 2 jalapenos with seeds included. This was a very light and healthy soup/chili, and we enjoyed it very much.

Teriyaki Salmon

This was really good! Next time I will use a bit less oil, and use fresh garlic and ginger. Other readers added brown sugar, I didn't think it needed it. The fish was very moist, and the flavor of the salmon was enhanced but not covered up.

Pork-Potato Meatballs

The meatballs were pretty good, but a little bland. I followed the recipe except that I cut back on the salt and added a tablespoon of fresh sage. I did have to use some olive oil to brown the meatballs, the pork I used was very low fat. I think kids would really like this.

Creamy Mustard and Tarragon Chicken

I thought this was just OK. The chicken was very juicy and tender, I flattened the breasts out a bit with a mallet because they were really thick. The sauce was very easy, but didn't taste as good as I had hoped. I don't think the combination of tarragon and mustard worked too well, I might try it again with some mushrooms and without the mustard.
