Big Soft Ginger Cookies

Grilled Pork Loin Chops

This was a great marinade. The sauce was a great addition to the whole meal... we ate it on the baked sweet potatoes and steamed broccoli and it was delicious!

Whole Grain Breakfast Cookies

The taste is great. My only complaint, and I can't believe I'm saying this, is that there were too many choc chips. The cookies didn't stick together well cause the dough couldn't get around all the chips. I'll probably try 1/2 cup of choc chips next time. Also used honey instead of agave nectar.

Morning Glory Muffins I

5 stars as far as healthy muffins go... :) I used all whole wheat white flour, 1 c. honey-no sugar, 2 tsp. cinnamon, 2 whole eggs instead of mixing whole and whites (cause i'm lazy), 1/2 pumpkin puree instead of apple butter, craisins instead of raisins, and 1/4 cup flax seed in place of 2 of the tbsp of oil. Next time I'm going to take out all the oil and use applesauce instead. They were still great muffins. My 3 and 1 year old ate 2 a piece when they first came out of the oven (the muffins that is, my sons were not in the oven). I love that there's nothing in these that makes me hold back from giving them to my kids.

Grandma Johnson's Scones

These are SOO good! I halved the recipe and put it in my scone pan which has 8 wedges, so they were extra thick, but really great texture. No need to do an egg wash like some have suggested. The top crunches up by itself. I substituted blueberry juice infused craisins (much cheaper than dried blueberries) for the raisins, and these scones tasted almost exactly like Panera's blueberry scones! Delicious!

Elaine's Peanut Butter Cookies

Nice peanut butter taste, but I followed the directions for baking time and they turned out really dry. They break really easily and have almost a powdery consistency. They're not all they're cracked up to be.

These tasted great. If you let the pan get good and hot, then spray it with cooking spray, then pour the batter in, you shouldn't have a problem with the first one being a flop.

Baked Oatmeal I

This was sooo good! I doubled the recipe and put it in a 9x13, but next time I'll try a 10x14. I cut down on the sugar like other reviews said, and I added about a cup of chopped fresh strawberries. It was plenty sweet. I'm looking forward to making this more often, and trying lots of different add-ins like apples, peaches, nuts and more cinnamon, blueberries, and whatever else I can think of! I didn't have applesauce, so I did use oil, but I'm definitely going to give the applesauce substitution a shot. Also, this was a perfect consistency for my one-year-old baby to eat (he only has 7 teeth, 4 on top, 3 on bottom).

Boiled Bagels

I'm not sure why people keep saying the bagels are so small. They start out that way, when you first divide them into 12 portions, but they rise. And really, wouldn't we as fat Americans be a little better off with smaller portions? :) I divided the batter out into 4 bowls and added serrano pepper and cheese to one, cinnamon, blueberries, and then italian herbs to the others. I put that all in before adding the last bit of flour to make the stiff dough. They turned out great... a little different from Panera, but great, nonetheless.

Black Bean and Couscous Salad

This salad was great. The 4 stars are simply because my husband would prefer fewer onions. I liked it the way it was, but the onion flavor was very strong, and I would like to see how it does with just 6 green onions rather than 8.

Broiled Tilapia Parmesan

Great flavor! The parmesan, mayo, and vinegar make a wonderful tangy topping for the fish. This amount of sauce is too much for the fish it calls for, so I just put a dollop on each fillet and toss the rest.

Melt - In - Your - Mouth Shortbread

These were good and yes, very melt-in-your-mouth. I was looking for a denser recipe, though, one more like the cookie tins you get at the store. So for me, these were a little too fluffy and not quite crunchy enough. I could probably do something to the recipe to change that, but I'm not a chef... I'll just find another recipe.

Frozen Coconut Caramel Pie

Awesome pie!! Super easy and everyone LOVES it. My husband got very protective of it when I mentioned bringing it to a Sunday School potluck. I've made it twice, following the recipe exactly, but next time I'm going to try a 12oz container of cool whip (I don't think they sell 16oz containers like it calls for) and make my own graham cracker crust in a 9x13. The two round pie crusts get pretty messy once you get the filling, caramel topping, and coconut/pecan stuff on top, and I think it'd be easier to transport/store in a 9x13.

Pie Crust IV

It was good and really easy. It wasn't as flaky as I expected, and the water it calls for is too much; the dough was a bit sticky. I will probably try another recipe, just cause there are lots out there, but this is a good one.

Chocolate Zucchini Cake I

This cake was OK, but the spices were pretty strong. I guess I'm more of a chocolate purist than I thought. If you are in the mood for a spice cake, this one might do you well, but if you're looking for a good chocolate cake recipe, this is not your cake.

Caramel Macchiato Cheesecake

Amazing!! I love coffee and cheesecake, and this was the perfect combination of both! I only had an 8 1/2 inch pan, so the center turned out a little soft. I think 5 more minutes would have done the trick.
