Whipped Shortbread Cookies

Delicious cookie! The only thing I did differently was... NOTHING! I did NOT increase or decrease the flour and I did NOT add cherry juice or any other liquid. Recipe is fantastic as is.

Beef Tips

I had to give only 4 stars because of the saltiness. After the first time, I used low sodium soy sauce and did not add the additional salt. I also don't use as much water as called for. I scooped some liquid from the skillet to dissolve the gravy mix. The longer it simmers the more tender the meat, but still don't need that much water, IMO. Overall, great recipe that my kids love!

Cajun Crawfish and Shrimp Etouffe

This is outstanding! I used only shrimp (not crawfish season); used red and yellow peppers instead of green; omitted the tomatoes; used only 1 T of Louisiana Hot Sauce and omitted the cayenne. It was plenty spicy for us and a huge hit with my teenaged boys! This will be a regular at our house, especially during Lent. In fact, have already made it twice. The second time, I wanted to see if frozen shrimp would work and it did. I ran them under cool water for a few minutes then drained. Having leftover peppers, onions, and celery from last week made this batch come together really quickly! Delicious! (I used Old Bay seasoning and Swanson seafood stock).

Easy Key Lime Pie I

I made this exactly as written and it is delicious! Yes, it's tart, but it's a pie made with lime juice. Don't change a thing! It does not taste eggy, it is not runny, and it doesn't have to sit overnight to firm up. In fact, mine was firm to touch as soon as I took it out of the oven. I cooled it in the freezer for 30 minutes, in the fridge for 30 minutes and served it. Even my picky teenage boys loved it!

Yummy Blueberry Cobbler

This was just okay for me. It's nothing like I think a cobbler should be. My batter was not "thin" or "smooth" at all, so I added milk to it. This resulted in a crust that was more dumpling-like, a gelatinous goo, actually. Maybe the recipe has a typo in it and it should read "thick". After cutting way back on the sugar, the filling has a great taste, but I will keep looking for the perfect cobbler.

Resurrection Rolls

My boys and I enjoyed making these together on Easter morning! Our marshmallows leaked out but that didn't matter. The "tombs" were still empty on the inside and, as an added bonus, they tasted fantastic! Will definitely be making these again, even when it's not Easter.

Peach Pork Picante

This is very similar to a Weight Watcher recipe that I've been making for quite some time. The WW version calls for low-sugar apricot preserves and a half package of low sodium taco seasoning. It is delicious and won a Golden Spoon Award many years ago.

Coffee Bonbons

These cookies are divine!! I would have given 5 stars, but the recommendation to frost cookies while warm was bad advice, IMO. Just as I suspected, the frosting slid right off! Nevertheless, I will be making these again. Right now, in fact. Thanks!

Extreme Banana Nut Bread 'EBNB'

Fabulous BNB! I did not make any changes in the ingredients other than using 1 c. white sugar and 1 c. brown and I used margarine because that's all I had on hand. I baked 2 9X5 loaves for about 40-45 minutes. I did completely flub up the mixing of the ingredients. I was in a hurry and hate to admit I did not read ahead. The ingredients went into the mixing bowl in order of appearance. Of course, I realized my "mistake" before baking and was afraid I'd messed up big time. If it comes out better by actually following the instructions, I don't think I'll be able to take it.
