Grandma's Gingersnaps

The dough was on the messy side but the cookies came out well. I found that if you make them on the smaller side you get more of a snap. Ones that were on the larger side were softer & less uniform (therefore the baker ate those ;-) ).

Russian Tea Cakes I

4.5 stars actually - my husband loved these! However, I'm glad I did a test run first before adding these to the Christmas tins. I ground up the walnuts in the mini-food processor and made sure the butter was very soft, per others suggestions. So the dough was no problem and overall this was a very easy recipe. My cookies must've been a little too big though cause I only got 28 cookies out of my batch. Also, be sure to let them cool well before rolling in sugar - my first dozen I must've rolled too soon and they were quite sticky and I ended up using more than 1/3 C. confectioner's sugar to coat them all. And they taste even better the next day!

Cranberry Oatmeal Cookies

Great use for leftover cranberries! I added chopped walnuts instead of raisins (a heaping half cup)and left out the chips 'cause I didn't want the cookies too sweet. They came out moist & delicious & are quite addictive!

Cranberry Nut Bread I

Delicious cranberry bread - I added extra cranberries & left them whole per others suggestion & it came out perfect. Orange juice/zest added a nice tang. This is likely to be our go to cranberry bread recipe from now on. Thanks!

Applesauce Cake IV

Can't get much simpler than this - what a nice little cake! Great on it's own, but adding nuts & some cream cheese frosting would be a welcome addition too. (I left out the raisins 'cause just not into them).

Rosemary Braised Lamb Shanks

Great Sunday dinner! Made this for Easter & husband & I really enjoyed it. I halved the recipe & used half a bottle of merlot & a little more than half of each of the broths & still had plenty of sauce (boiled the heck out of it for about 30 min. at the end to reduce per suggestions). Also added a small package of sliced baby bella mushrooms in with the onions, etc. & they made the sauce even more delish. However the polenta I made was too rich for it. It's already a fairly rich dish so next time I'd opt for mashed potatoes or rice instead.

Sugar Coated Pecans

Excellent - I have brought these nuts to 2 gatherings so far and they were a hit! I do add some extra cinnamon and line the baking sheet with foil for easy clean up. A keeper and new tradition, thank you for sharing it!

Cranberry Nut Bread II

Very good and easy. I didn't have an orange for zest so just used a little extra oj and it seemed orangey enough and moist. Also did not have to bake for whole time - was done about 10 minutes earlier.

Minestrone Soup I

I love this recipe. I used butter, vegetable broth, Barilla wheat pasta (more than noted, probably about a cup) and added a lot more cabbage (I got a small bag of shredded cole slaw cabbage and added about half of that). It was a hearty, filling soup and very easy - a keeper for sure.

Italian Style Meatloaf I

This meatloaf was good, a solid "4". I read some of the comments so was aware it may end up very moist but still used 2 eggs as I figured they'd help bind it together, and I drained the tomatoes thoroughly. Also, didn't have any italian seasoning around so just used extra oregano and basil, and had garlic breadcrumbs so left out the garlic salt. I put it in the oven covered for an hour, but then drained it, and put it back in the oven uncovered for another 10 minutes and it got nice and brown on top. Was probably still a little underdone but we were too hungry at that point to wait any longer! Served with baked potates, it was a nice meal for a rainy night.

Boscobel Beach Ginger Cake

Really nice, moist cake. The fresh ginger in it is wonderful & I can't imagine making it without it. Serving with an icing, cream, or glaze would make it outstanding.

Beef Stew VI

I halved the recipe & didn't have a lot of time so made a quicker version of it (browned beef, added veggies & sauteed for about 5 minutes, then added boullion, simmered for an hour, adding cornstarch in the last 15 minutes)& it still came out great! Next time will make whole batch & serve over egg noodles - mmmmmm...

Fabulous Foolproof Lasagna

Good, basic lasagna recipe. Will take the time to make regular noodles next time though - no boil noodles tasted gummy. Definately add extra sauce as others suggested.
