Italian Style Turkey Meatloaf

WOW!! This was a huge hit at my house! I doubled the recipe to make sure we had leftovers and I also put on spaghetti sauce instead of tomato sauce (I just wanted to make sure it had enough flavor). And even though it wasn't part of the recipe, I had some leftover heavy cream that I drizzled over the spaghetti sauce before baking. That just made it over the top! I know peole hate when you review a recipe that you made changes to but the basic recipe I did follow to a T but just added a few personal touches to make it my own. I will forever be using this meatloaf recipe!! Thanks!

Cha Cha's White Chicken Chili

This soup is great! It's so easy to make it your own with whatever you have on hand. I put in some fire roasted diced tomatoes which tasted wonderful. We'll be making this on again for sure!

Bacon Ranch Cheese Ball

I've never considered myself to be much of a cheese ball fan but after trying this one that my friend made at a recent Christmas party, I'm a convert! Delicious flavor all around. Everyone else loved it as well so I will certainly be making this on my own for future parties.

Curried Coconut Chicken

So, so, good! I didn't have the full 2 lbs. of chicken so instead, towards the end I added some yellow squash to make up the difference. Wow! Delicious and healthy! I served this over rice stick noodles.

Easy Greek Yogurt Cucumber Sauce

Even after an hour of throwing this together it tastes amazing! I can only imagine what it will taste like tomorrow. I used nonfat Greek yogurt and low fat sour cream. Also, just because I love it, I added 1/2 tsp dried dill. SUPER!!

Salmon with Creamy Dill Sauce

Ok, to be honest I bought the raw stuffed salmon from Costco and was looking for a creamy dill sauce to pair with it...I was stoked to find this! The sauce is to die for...and really, it's totally open to just add more or add less depending on your liking of certain ingredients. I didn't have any white wine so I didn't add it and honestly I don't feel like it's missing anything. I put about three times the amount of capers but left the caper juice at what was called for. I also put much more dill. SOOOOO good! I'm making cheese tortellini to go with it all and plan to put the sauce onto the pasta.

The Best Potato Salad

Holy smokes this one is a keeper!! Made the dressing as directed and just put my usual potato salad favs in (Idaho potatoes, black olives, celery, HB eggs and grated red onion. My man said it was the best he's ever had!

Chinese Garlic Chicken

This is very good. Didn't change a thing. Made it for my husband, dad, and kids (5 & 2) and everyone loved it. My husband and dad kept saying "mmmm" the whole time they ate! Served it with white rice, chinese salad and lean cuisine spring rolls. It's such a quick and easy recipe to prepare...I definitely will make it again.

Trini Style Chicken

I made this recipe to the T. No changes whatsoever. Honestly, I was also really scared about putting the chicken into a dutch oven with carmelized sugar and no liquid whatsoever. Thankfully I was brave enough to try it and I am so glad I did! I lowered the heat from medium to medium low just to be safe and once I lifted the lid off after 25 minutes, I was surprised to see a bunch of liquid in there just bubbling away! (I used all thighs with bones and skin on btw). After removing the lid I just continued to follow the instructions and was just wowed by the end results. My husband also loved it!

Garlic Rice

This is so easy and delicious. I can see it going with lots of different types of dishes. Tonight I'm using it with a Trini Chicken which is also from this site. I didn't have any ground pork so instead of oil I used 2 tbs. of bacon drippings instead. It tastes great!

Greek Lemon Chicken Soup

Delicious! I left out the chicken broth and just used the full amount of chicken base called for. It did not lack of salt whatsoever. I left everything else the same aside from using only 4 egg yolks. I can't see how adding more egg yolks could make it any better. It was heavenly! My husband loved it as well.

Chicken Chile Verde

Made this tonight using only bone in, skin on chicken thighs. I cooked as directed and once I added the potatoes I removed the chicken from the pot to take off the skin and bones, shredded the chicken and then replaced it in the pot to continue cooking with the potatoes. I am making burritos with it. It is very yummy! It could almost use some fresh cilantro and lime juice at the very end to give it a little more punch.

Baked Kale Chips

This recipe couldn't be easier! Well, except for spraying them with non-stick cooking spray (canola in my case) instead of using oil. I can't believe how close to potato chips they actually tasted! I could eat a whole bunch of kale myself!

Wonderful Fried Fish Tacos

The batter is totally yummy as long as you season to taste. I added cayenne, garlic powder and onion powder. As for the dressing, I made a mixture of Mayo, lime juice, chipotle peppers, garlic powder and salt. I got rave reviews!! I served it up with jack cheese, angel hair cabbage, lime wedges and red onions. They were fantastic!

The Humble Shepherd

This is so good and easy to make. I used two packages of Idahoan intant potatoes (homestyle) instead of making mashed potatoes from scratch. I was able to throw this together within about 20 minutes plus baking time. My husband LOVED it and so did I! I also added fresh celery because I love it so much. I totally recommend this!

Easy Lettuce Wraps

This had a lot more flavor than I anticipated! To give it a little more color and texture I added diced red bell pepper and sliced wather chestnuts. I also topped the wraps with fried mung bean threads like they do at P.F. Changs. So yummy!

Slow Cooker Cilantro Lime Chicken

I made this exactly as written and it was so delicious!! I used pace picante sauce for the salsa and didn't find that the chicken was too salty at all. It was perfect. My husband raved about the chicken burritos I made with it. It would be great in tacos, taquitos and enchiladas as well. Mmmmm!
