Baked Kale Chips

This recipe couldn't be easier! Well, except for spraying them with non-stick cooking spray (canola in my case) instead of using oil. I can't believe how close to potato chips they actually tasted! I could eat a whole bunch of kale myself!

Wonderful Fried Fish Tacos

The batter is totally yummy as long as you season to taste. I added cayenne, garlic powder and onion powder. As for the dressing, I made a mixture of Mayo, lime juice, chipotle peppers, garlic powder and salt. I got rave reviews!! I served it up with jack cheese, angel hair cabbage, lime wedges and red onions. They were fantastic!

The Humble Shepherd

This is so good and easy to make. I used two packages of Idahoan intant potatoes (homestyle) instead of making mashed potatoes from scratch. I was able to throw this together within about 20 minutes plus baking time. My husband LOVED it and so did I! I also added fresh celery because I love it so much. I totally recommend this!

Easy Lettuce Wraps

This had a lot more flavor than I anticipated! To give it a little more color and texture I added diced red bell pepper and sliced wather chestnuts. I also topped the wraps with fried mung bean threads like they do at P.F. Changs. So yummy!

Slow Cooker Cilantro Lime Chicken

I made this exactly as written and it was so delicious!! I used pace picante sauce for the salsa and didn't find that the chicken was too salty at all. It was perfect. My husband raved about the chicken burritos I made with it. It would be great in tacos, taquitos and enchiladas as well. Mmmmm!

Bacon Wrapped Barbeque Shrimp

So yummy! We grilled them on the BBQ until the bacon was crispy and they turned out perfect. I used Cajun seasoning instead of BBQ seasoning, so good!

Ten Minute Enchilada Sauce

This recipes is way better than any canned sauce and so easy to make. I love that I can adjust the heat level depending on what type of chili powder I use. So yummy!

Southwestern Quinoa Salad

Holy Moly this is good! I also added some chunks of avocado just because I love it! It had so much flavor I just couldn't stop eating it! My husband loved it too. I served it with adobo seasoned, pan seared chicken breasts. YUM! Thanks for introducing me to one of my new favorite foods!

Creamed Spinach with Jalapenos

This is SO good and easy! I follow the directions as stated but if I have a red bell pepper on hand I love to finely chop one up and add it in with the onion and pepper. It adds a nice color contrast. Also, I've tried using many types of cheese in this dish and they all seem to work great. My latest version had mozzarella and feta and it got rave reviews at Christmas dinner!

Indian Style Basmati Rice

This rice is even better than the rice in an Indian restaurant! So easy and YUMMY! Instead of cardamom pods (because I can't find any where I live) I use a dash of Allspice and that seems to do the trick. Other than that I follow it to a "T"!

Colorful Spinach and Prosciutto Side

This is such a great side dish and so easy to make! It works well to take along to pot lucks or dinner at a friend's house as well and so far I haven't met anyone who doesn't like it. My husband isn't usually fond of spinach and even he loves this dish!

Fancy Chicken Salad

This is fantastic! I'm doing the Atkins diet and found this to be a perfect lunch/snack/whatever! The flavor really pops and if you use a store bought rotisserie chicken it couldn't be any more simple to make!

Cheese Fondue

This is an excellent recipe for traditional fondue...and a whole lot cheaper than going to a fancy fondue place! I bought an electric fondue pot which works excellent with this type of recipe!
