Sweet Potato Pancakes

Mine were really terrific!! I was glad I had read some of the previous reviews and and I think I manage to avoid some of the problems. I (accidentally) added a tsp. baking powder. I did use oil (although Canola, not Olive). I did not use molasses but used 2 tsp. Splenda. Also, my batter sat in the fridge for several hours before cooking. It was insanely thick, but cooked through easily. It satisfied my need for a no flour/no sugar pancake and my kids had something they could put syrup on. Only four stars just beacuse of the modifications, otherwise it would have been five. They were delicious.

Bacon and Tomato Cups

These were incredible. They were perfectly tasty and just the right size. I did not slice the biscuits horizontally (that seemed difficult). I just pulled them apart and smooshed them into the muffin tins. Worked great. I also used sweet vidalia onion and think that made a difference. Had a big party and these were a HUGE hit.

Easy Stovetop Peach Cobbler

Made it with canned cherry pie filling; skipped the sugar (figuring the pie filling already had plenty compared to canned peaches). It was YUMMY.

Twenty Four Hour Fruit Salad

With the recommendations listed above, this turned out to be delicious. I skimped a little on the whipped cream and marshmellows. I did not add the poppy seeds and I forgot the bananas too (although that was a mistake). The marshmellows got nice and and plump. I have learned with other marshmellow salads that cheaper store brand marshmellows don't plump up; gotta get name brand for this salad. I will make it again.

Strawberry Cake from Scratch

Made it for my daughter's party and had a 2, 3 and 4 year old who ate ALL the cake and icing (instead of just the icing) and asked for seconds. It was moist and yummy. I beat the egg whites separately and added them last and used parchment paper on the bottom of the pans. Very sweet and tasty. Used Cream cheese icing recipe from the allrecipes.com's "walnut rasberry torte" which uses sweetened cream cheese and unsweetened whipped cream to make the icing. Not too sweet and perfect for the sweet strawberry cake.

Raspberry Walnut Torte

This cake was amazingly delicious. The recipe for the icing alone makes it spectacular. It's best feature was that it was not overly sweet the way many cakes can be. Made it for a party and it was a HUGE hit.

Alaska Salmon Bake with Pecan Crunch Coating

This was DELICIOUS. I used packaged dry bread crumbs and was able to throw unchopped parsley, pecan pieces and bread crumbs in my mini-food processor to chop and mix them and it turned out to be way easier than I expected. The sauce and crust were absolutely delicious! (and I don't generally even like fish).
