Jay's Signature Pizza Crust

Reviewed: Mar. 27, 2008
I might never buy pizza dough from the grocery store again! This was very easy and delicious. I used a mix of organic whole wheat and white flour, added some parm cheese and this came out perfect!! So much better for you than pizza hut or many others like it. I am using this recipe again tonight, this time I'm adding some seasonings like basil and oregano.....YUM

Lemon Coconut Squares

Reviewed: Jun. 2, 2008
Oh so good! I also did as others suggested and cut back on the sugar alittle and increased lemon juice. Also added a few drops of yellow food coloring for more color. These are still hot from my oven but I had to taste as they smell delicious.... can't wait to have more after they are cooled or seems would be good chilled with a dollop of whipped creme.....YUM!!!!

Banana Pancakes I

Reviewed: Jun. 14, 2008
These are excellent!! I have made them several times and they do make a dense pancake not a light fluffy kind and I do sift my dry ingredients and followed the recipe exact except that I do add alittle vanilla extract, sometimes some finely chopped walnuts and/or choc chips. A suggestion to help make sure they cook through and are not mushy is to make sure that once the batter is poured into the pan spread the batter out somewhat thin, this has helped me. Everyone here, all 5 of us LOVE these pancakes!!

I served this last night for a Halloween party that I had and it was a great hit! Especially b/c I added vodka as someone else suggested. I used apple cider not apple juice and sprinkled cinnamon in since I did not have sticks and it turned out wonderful. Will definately make again!

Beef and Irish Stout Stew

Reviewed: Mar. 18, 2009
I made this for my family for St. Patricks Day dinner and boy was I glad I did!! I loved the ease of this recipe by cooking everything in one pan. I did not bother measuring out the tomatoe paste...just use the whole 6 oz can nor did I measure the beer, just use the whole bottle 11.2 oz Like others suggested I added about 2 tbsp of brown sugar to cut the bitterness. It seemed too thick so I added about 2 c beef broth also then simmered for almost 3 hrs. Came out perfect, very yummy. Definately recommend to serve this with the amazingly easy Irish soda bread from this site. Thanks for a great meal!!

Sometimes simple is best!!! These are by far the best banana muffins I have ever made and I've been cooking for over 20 yrs. I did substitute 1/2 c of the white flour for whole wheat, added 1 tsp vanilla, chopped walnuts and choc. chips. The key really is to NOT overmix! Super simple and delicious!!!
