Banana Sour Cream Bread

Reviewed: Nov. 19, 2006
I had to leave a review b/c it made the VERY BEST banana bread!! I did make some changes, took others advice and cut sugar to 2 1/2 c sugar, used white/whole wheat blend flour, wheat bran and wheat germ to make the 4 1/2 c flour then added 1 tsp baking powder since some had said it was alittle too dense/didn't seem to cook all the way through. It came out perfect and sooo delicious. The recipe made 5 smaller loaves and 12 muffins.

Lemon Coconut Squares

Reviewed: Jun. 2, 2008
Oh so good! I also did as others suggested and cut back on the sugar alittle and increased lemon juice. Also added a few drops of yellow food coloring for more color. These are still hot from my oven but I had to taste as they smell delicious.... can't wait to have more after they are cooled or seems would be good chilled with a dollop of whipped creme.....YUM!!!!

Low-Fat Blueberry Bran Muffins

Reviewed: Feb. 7, 2007
Very good will make these again!! I did make a few changes, used 1/2 tsp almond extract, 4 oz of cherry yogurt instead of applesauce, and chopped frozen cherries. When using frozen berries of any sort I always dust them with alittle flour and sugar before adding to the batter. Next time I might add some chopped pecans too. My kids loved them and I love the fact they have over 4 gms of fiber per muffin!!

Peach Cake II

Reviewed: Aug. 5, 2009
Excellent cake, would make again and recommend it others. I only had 3 fresh peaches so I also added a large can of peaches and it worked out fine, actually could of used even more peaches than that. As others suggested I used alittle less oil and replaced with the peach juice from the canned peaches. Cinnamon was perfect, could of used alittle less sugar but that just depends on your preference or severity of your sweet tooth!! Overall it's a keeper!!
