This is a healthy soup with a few changes. I placed the squash, jalapeno, carrot, and onion on a foil-lined pan and sprayed with butter spray before placing in the oven at 375 to roast until brown. Then mashed and simmered with the broth about 30 minutes. Used non-fat evaporated milk and low fat coconut milk and used my stick blender after cooking down five minutes or so. Did not garnish and did not feel it needed any, really. Used two jalapenoes and next time will leave in some seeds, as it was not spicy at all but still quite good. Thanks for sharing!
