Magic Wands

Did these with white chocolate bark, which we melted in a medium non-stick skillet. This allowed us to hold the end of the pretzel and twirl it around in the melted bark to cover down to our fingers. Then sprinkled with colored sugars over a paper napkin. In the end, twirled them into the "rainbow" mix of sprinkles that had accumulated on the napkin. Also did some with decorator candy sprinkles. Great idea. Got 55 out of half the 20 ounce pkg of vanilla bark. So cute and tasty too.

Pita Chips

Too much spiced to use for a dipping tool, as the spices on the chips were all we could taste. Used olive oil PAM spray in place of olive oil, and sprayed the pan and then the bread. Thanks for sharing

Sesame Pasta Chicken Salad

Peach Pie

Only had 8 peaches so added some rhubarb we had on hand to fill it in (should have added a little more sugar, as rhubarb is quite tart). Added the cornstarch suggested by many other reviews, and wish I hadn't, as there was almost no juice. It was very tasty tho. Used some other suggestions of starting off at 425 degrees for 15 minutes and turning down to 350 for remainder, as well as leaving in the oven for several hours to ensure a non-soggy crust. Great suggestion and will use it for other pies hereon out. Used half white and half brown sugar and also added nutmeg to the crumb mixture. All in all, a very easy and tasty dish. Oven Fried Chicken II

Added hot sauce to eggs and simply sprinkled chicken seasoning and cayenne on the skinless thighs before flouring, then followed instructions. As suggested by several other reviewers, did not use the oil; sprayed foil-lined pan with PAM and then sprayed the chicken with it too when placed on the foil. Crispy yet tender with a great coating.Thanks, Cookie240, for sharing!

Best Baked Chicken

Used 4 large breasts and kept the sour cream mixture whole anyway. Used nonfat Greek yogurt in place of sour cream, lime in place of lemon juice, garlic powder in place of garlic salt, and no celery salt. Also used panko crumbs in place of stuffing mix. Cooked these a little longer, as they were large breast halves, but one hour would have been great, as they were somewhat dry (my fault for over cooking, I think). DH liked them and they had a great aroma when cooking and a great flavor. Thanks for sharing.

Ham and Cheese Crescent Roll-Ups

I cooked these with leftover Easter ham, which is decidedly more difficult to "mold" into the desired shape to fit. I also used Monterey Jack cheese, as that was on hand. They were quite tasty and even good leftover the next day for breakfast. Thanks for sharing.

Ham Cake-ettes

These are quite tasty. Mixed them up early in the day and rolled them in the panko crumbs just before cooking. Did not have Dijon but used Spicy Southwestern mustard instead, which was quite good. Mixed a couple of tablespoons of butter with same of olive oil to fry and had to repeat amounts for second batch. Thanks for sharing a wonderful way to use up the last remnants of that Easter ham!

Oven Fries

These turned out very good. I used olive oil, which I hand-rubbed onto the sliced sliced potatoes. Then sprinkled seasonings over both sides of fries and rubbed in a bit, adding quite a bit more cayenne and some salt-free Greek Seasoning, as had used sea salt with the other spices. I have done oven fries many times before, always spraying the pan with Pam, placing the potatoes on, sprinkling them with spices, then spraying the potatoes with Pam and cooking at 425. The olive oil works better, I think, or maybe the difference is the sugar (I just sprinkled that over the fries and probably used quite a bit less than a tablespoon), but should have Pam-ed the pan, as they stuck quite a bit when done. They tasted great, tho, and that is what we cook for! Thanks for sharing.

Mother's Ham Casserole

Very good recipe for using leftover ham! I boiled the onion with the potatoes and carrots, saving 3 tblsp of butter from my fat content! Did not sauté the ham or use celery or green pepper (but they would have been tasty additions). Used Monterey Jack, which I grated directed into the butter-flour sauce to melt. Did add pepper but no salt. After pouring sauce over the ham and potato mix, I spooned a layer of Greek nonfat plain yogurt on top and under the crumbs, to add a sour cream effect. Used about 8 Ritz crackers in place of crumbs. Put it all together early in the day to cook later; by that time, the cracker topping was soft (like soft bread crumbs). Thanks for sharing!

Broccoli Cheese Soup

This is wonderful. We used 2 bouillon cubes, which were sautéed per Serena's advice, after onion and garlic were softened, adding 6 cups water after the broccoli was put into the pot (minus one cup, which was saved and mixed with 1/2 cup cornstarch to add when called for). Used 6 tblsp butter instead of 1/2 cup. Used 3 12 ounce pkgs frozen broccoli and could have used a 4th, but it was good. Used 1 cup evaporated skim milk and 1 cup fat free half and half. Shredded 1 pound of medium cheddar into the soup when all was cooked. This is very easy and elegant. Thanks for sharing!

Bacon for the Family or a Crowd

This is the method I use, whether cooking for a crowd or not. I use a 300 degree oven, line with foil for easy cleanup, and cook for 30 minutes or so, while everyone is waking up - this gives them time to get hungry for breakfast. With this method, the bacon comes out just right, whether I use thick or regular.

Kabob Marinade

This was very good. We used olive oil instead of vegetable oil and lime juice in place of lemon (had no lemon). It was very good on both the steak and shrimp we had, as well as the veggies, all of which we marinated in separate containers. I added a raspberry/italian dressing to the veggies and shrimp, as we needed a little more marinade for the amount of food on hand. Easy to make and good on everything. Thanks for sharing.

Donut Muffins

Used half whole wheat pastry and half all-purpose flour; 1/4 tsp nutmeg; reduced the topping sugar to 1/4 cup but left the cinnamon at 1 teaspoon and should have cut the topping margarine as well, as had about half left. Got 18 mini's out of this. Had sprayed the pan with PAM and they plopped right out when done. 15 minutes cooking time was perfect in my oven. Thanks for sharing! (No one guessed about the substitution of ww flour!)

Grandmother's Buttermilk Cornbread

Made with the whole wheat flour, as suggested by the author in her review. Easy and good, but not wonderful - maybe the whole wheat flour's fault. Anyway, used Splenda as well, so save on some calories. Would make again, but hubby did not think it the best.

Chicken Noodle Casserole I

Taco Pizza

Made our own crust. Added 3 cloves roasted garlic to crust when adding warm water; added the rest of roasted garlic to bean-salsa mix. Sauteed the onions when beef was almost done. Did not add taco seasoning or water to beef and onion mix. Layered beans, then tomato paste mixture, then beef/onion mix, then low fat 4 Mexican cheese mix and cooked at 500. Added shredded lettuce and diced tomatoes (Greek yogurt to mine) and served with taco sauce. DH loved it and it was yummy
