Roast Pork with Maple and Mustard Glaze
Excellent, my family is still raving about it. I was hesitant to try it since I am not a big fan of maple flavor but oh my goodness, this is great. I followed other suggestions and cooked the glaze down a little to make it thicker, put foil down in the pan and cooked it in the smallest pan I could, 8 x 8. I used a sirloin tip roast from Costco, perfect fit in an 8 x 8. I basted it two or three times and did what a reviewer said, cook it at 425 for 30 minutes and then down to 350 for the rest of the time. This did give it a nice browned top. The only thing my family said I need to do next time is double the glaze, they wanted to put it all over their meat! Thank you for a great new family recipe.

Ginger Glazed Mahi Mahi
Made this tonight, delicious. I did what others said and doubled the sauce, baked it at 400 for twenty minutes and boiled and reduced the sauce to spoon over the fish when done. I added some cornstarch, I like thick sauce. Everyone raved over the flavors. I will do this with other types of fish. Thanks for a great recipe that was so easy. Next time I might use reduced sodium soy sauce, it seemed salty to me when I doubled it. I am not a big fan of salt, others might be.

Pumpkin Black Bean Soup
This was fine. I have other recipes for black bean soup that I like better, with a more Mexican kick, but I was glad I tried this. If you are trying to get more vitamins in your diet, I would definitely try this, can't beat the nutritional values in pumpkin. Thanks for posting, I have been wanting to try this for a while and am glad I did.
