Salsa Chicken Rice Casserole

I cooked the chicken in a crockpot with salsa, salt, pepper, cayenne, salt, black pepper, cumin, coriander, chili powder, and red pepper flakes. When it was done, I shredded it and added the soups right to the crockpot. I did one layer of rice, chicken mixture and cheese. I also cooked 30 minutes with foil on and 15 minutes with foil off. Very tasty! I could have actually used a little more rice, I'll use two cups next time and also add beans.

Butterscotch Oatmeal

This oatmeal was quick and easy to make. I think the egg gave it a nice richness. I have never seen egg in an oatmeal recipe and thought it was a great addition, it gave the oatmeal a nice, rich flavor. I also cut the sugar to 1/4 cup and agree that it was plenty sweet. I would probably even cut it a little more to just under a 1/4 cup.

Fresh Strawberry Upside Down Cake

A fun and great tasting recipe. I only used one small 3 oz. box of strawberry gelatin with fresh strawberries and this turned out very delicious and perfectly sweet. I was surprised that it flipped so easily out of the pan.

Next-Best-Thing-To-Robert-Redford Pie

We had this growing up all the time and just called it Robert Redford. You can double the cream cheese layer if you like more cream cheese but this cake is rich and delicious as is. I mix the whipped cream, cream cheese and sugar to taste. I don't really follow the measurements given. Also, you can use two chocolate puddings instead of one chocolate and one vanilla if you want a stronger chocolate flavor. A unique and fun dessert. As with many desserts, this is best after refrigerated for a day.

Slow Cooker Beef Stroganoff I

This was a good, fast, and easy recipe but didn't have that authentic stroganoff flavor. I would probably opt to make from scratch with fresh herbs but if short on time, this is still a good recipe.

Zesty Slow Cooker Chicken Barbecue

Yum! Only add sugar if you like it extra sweet. The sauce is thin but you don't really need much sauce as the chicken takes on all the delicious bbq flavor. I added minced onion and a litte pepper.

Slow Cooker Beef Stew I

Very good! I used only one lb. of meat and more carrots and potatoes and added a little extra Worcestershire sauce. Cooked on high for 5 hours and it turned out great.

Thai Curry Soup

I also LOVE the Thai Curry Soup from Noodles & Company. The base of the soup is a good start, I added Sriracha chile sauce to give it a little more heat, a little yellow curry powder in addition to the red, and a little extra sugar. The end result was as good or better than Noodles version.

Yummy Honey Chicken Kabobs

I didn't like the pepper in the marinade and I will attempt it again without the pepper. It's funny because I love pepper but just didn't think that it tasted right with this marinade. I also doubled the sauce so I would have plenty for basting.

Mom's Zucchini Bread

Delicious! I switched to 1c white sugar and 1c brown sugar. Also, I kept adding zucchini until the batter was a good consistency and easy to stir, I ended up using about 3 cups of zucchini. The bread was SO moist. I'm definitely going to try using applesauce in place of some of the oil next time, I think that would make it even better!
