Italian Summer Squash Polenta Bake

I really liked this dish. My husband and kids loved it! I made a few changes. First, I baked the polenta while making the sauce. It was a time and mess saver, plus made the dish more healthy. I sauteed onion and garlic in olive oil and added some italian sausage. I diced all veggies to help my 1 yr olds eat them and added mushrooms and spinach to the rest of the veggies listed. It was really great. This is the kind of meal where you can add whatever you have on hand. We will make it again.

Daddy's 'If They'da had This at the Alamo we would'ha WON!' Texas Chili

This is a WONDERFUL chili. I subbed a can of beef broth for an equal amount of the water, chopped up the jalepeno, used smoked paprika and simmered it for 3 hours. My husband loved it and was so glad we found a good recipe!!!

The Best Lemon Bars

These are the best Lemon Bars I have made so far. It is a perfect mix of tart & sweet. I made a couple changes based on the reviews, so I had to give the recipe 4 stars. It is a good base. Here are my changes Crust = as directed Filling = 1 1/2 HEAPING cups white sugar, 2 small lemons zested, 2/3 cup & a dash lemon juice, 1/3 cup flour (to compensate for more juice)

Easy Tuna Casserole

ok, I am going to rate this recipe as it is written and then give you the 5 star alterations. For a 5 star rating...saute 1/2 onion and a couple cloves of garlic in some olive oil or butter. Add this to the noodles (I used egg noodles), cream of chicken AND cream of mushroom, 1 cup milk, salt, pepper, 1-2 cups grated cheese. Then top with extra cheddar cheese. I think the topper is optional and can be done with potato chips or bread crumbs or crushed crackers or the french onion the recipe calls for.

Strawberry Spinach Salad I

Excellent idea. I added some blueberries and feta cheese to make the perfect red/white/blue 4th of July salad. I also toasted the almonds and used Balsalmic vinegar. Everyone loved it!

Raspberry Cheesecake Stuffed French Toast

OMG. My husband LOVED this. We made it a bit more healthy by using fat-free cream cheese and a whole grain bread. I think next time we may use egg beaters or mostly egg whites. Make sure you leave the bread out overnight for the right consistency. I would like a bit less cinnamon, but my husband liked it as is.

Enchilada Sauce

Yum Yum Yum. I was looking for a non-tomato based sauce and this was it! I made this sauce to go over my chicken enchiladas instead of a sour cream sauce. It is a great healthy alternative. My husband, brother & sister in-laws loved it. I reduced the chili powder to 4 tablespoons. I had to add 2 extra tablespoons of flour while simmering to help thicken the sauce. (It will thicken some when you bake it) The roux isn’t traditional. It is a dry mixture…to get the flour to blend right, just add a bit of the chicken broth. Overall it was perfect and I will definitely use this over and over and over again!

Chicken Pot Pie IX

My husband is addicted to this Pot Pie. I used Rotisserie chicken, cut the celery seed, added 1/2 tsp poultry seasoning, made additional sauce (added a garlic clove to saute and used olive oil instead of butter), brushed the crust with egg white, add added a ton of veggies (cooked in the chicken broth). Superb!

Broccoli Rice Casserole

This dish is a staple in our house and at family get togethers. It can be a side as written or a main casserole by adding chicken. These are my modifications: I use 2 16oz packages of broccoli, I use brown rice cooked in chicken broth (rice cooker), I substitute cream of chicken for cream of broccoli, substitute milk for the water, and add season-all to taste. To reduce the number of dishes, I saute the onions & celery in a large sauce pan and then add the soups, milk, & cheese until melted. I combine this mixture with the brocolli and rice right in the baking dish.

Pumpkin Cake II

My husband has asked for this cake over and over again since I made it. He LOVES it. This is a 5 star with the following tweaks....I used a whole can of pumpkin, reduced the sugar to barely 1/2 cup and added 1 tsp pumpkin pie seasoning, 1 tsp nutmeg, and 1/2 tsp cloves. It turned out just right. I used a bundt pan and baked 45 minutes. I topped it with a cream cheese frosting. I will continue to make this every year.

Creamy Hollandaise Sauce

This was WAY too buttery. To cut it, I used 1/2 tsp Worcestershire Sauce which only helped a little. I will probably look for another recipe.

Chicken Tortilla Soup V

This was great. The whole family loved it. I used some of the other reviewers suggestion and added some of my own. This is by far one of the best Tortilla Soups I have had and I am a native south Texan. This will become a staple in our house. For a short cut, I used rotisserie chicken and shredded it. This also ensured moistness. I sautéed the chicken in the onion, garlic and spices (doubled). I used a whole onion and two cloves of garlic. I also used 5 cans of chicken broth, black beans, and pace picante. My fav add was fresh pico de gallo. I did cook some rice and added avocado on top with the cheese and tortilla chips. Super yummy.

Baked Potato Soup III

My husband really enjoyed this soup. It was perfect for a cool day. I made the following changes. 1. browned the onion in the used bacon grease and butter to make the roux. I also added some garlic powder to this. 2. 1 can chicken broth 3. 5 cups milk 4. made the potatoes a bit chuncky I recommend this soup. It hit the spot.
