Strawberry Shortcake Ice Pops

These were amazing! They only lasted two days in the freezer before we gobbled them up. The only change I made in the recipe was to add a dash of kosher salt to the pudding and cookie crumb mixture to balance the sweetness, and I did use sugar-free pudding mix and fat-free milk. The pops are sort of reminiscent of the strawberry shortcake pops you can buy at the store, but the texture is very different and the strawberry flavor is more intense. This recipe made eight standard pops for me. Thanks so much for sharing!

Coconut-Cream Cheese Frosting

This frosting was really good. I used it on top of the Hawaiian Wedding Cake recipe from this site and it was a hit. I would definitely suggest adding the toasted coconut on top - it seems like a small touch but it really makes a difference in the level of coconut flavor that comes through.

Hawaiian Wedding Cake I

This recipe was really tasty and so easy to throw together! I loved that everything was mixed in the same bowl and only took about a minute to whip up. I did swap out half of the white sugar for brown sugar as others suggested to give it a deeper caramel flavor that compliments the nuts and coconut well, and I used the batter for mini cupcakes and used mini liners for easier removal. I also topped them with the coconut cream cheese recipe found on this site. Delicious!

Creamy Chicken Enchiladas Verde

These were yummy and easy, very Americanized though. I would skip this recipe if you're looking for something more authentic tasting, but as it is it's a very creamy, comforting dish. I didn't have the special Philly shredded cheese so I just used a regular bag of Mexican style cheese and added a couple tablespoons of cream cheese to the sauce mixture in the pan. Next time I'll probably add some cumin and cayenne to punch up the flavor a bit, and maybe use more salsa. Will make again.

Stuffed Shells III

This dish was sensationally good! I followed another's directions and made a few changes: halved the amount of mozzarella, swapped out full-fat ricotta for skim ricotta, made sure to refrigerate the cheese mixture before stuffing the shells, and covered the dish with aluminum foil while baking. They turned out cheesy and delicious!

Spiced Plum Bread

I had a can of plums on hand and had no idea what to do with them, so after looking up "canned plums" on the ingredient-only tool I found this recipe. I wish I had looked up just "plums" (as I did later) because there seem to be a good variety of plum bread recipes that look better than this one. While I loved the spiciness of the cloves, the batter was far too thick and dry before I took others' advice and added 1/4 cup milk and an extra egg, and the cooking time called for dried out my loaf and made the edges burn, even though I took it out of the oven ten minutes early. I probably won't make this again, sorry.

Whole Wheat Drop Biscuits

These were excellent! I used what I had on hand - pastry flour instead of all-purpose flour and skim milk instead of soy milk - but even with substitutions these had a tender crumb and were light and airy. I added some garlic powder and basil along with the flour; very savory and delicious. Thanks for the recipe!

Baked Mushroom Thighs

Incredibly yummy comfort food recipe, very easy and minimal work - great for busy weekdays when you just want to throw something in the oven and relax after coming home. I usually put on the rice cooker while popping the chicken in the oven and voila! Dinner is ready within an hour, and mama has time for a glass of wine and an episode of something while it cooks. Thanks for sharing this!

Ranch Burgers

Using ranch mix in burgers is a terrific idea - the flavors are perfectly complementary with whatever ground meat and condiments you're using. Unfortunately the addition of the saltines and egg is a little overkill, so I had to rate this only 4 stars. I've made this multiple times now and usually use one whole packet of ranch mix to 1 1/4 pounds of ground turkey, half of an onion (well-minced), and about a quarter cup of dry bread crumbs. Comes out great every time!

Bacon-Cheddar Deviled Eggs

This is hands-down my favorite deviled egg recipe of all time. I've been making it for years now and there are never any leftovers. The honey mustard seems like a strange touch, but the sweetness really brings out the smokiness of the bacon and the saltiness of the cheddar. Excellent recipe.

Belle's Hamburger Buns

Delicious! I'm at high-altitude and these turned out soft and buttery with no alteration. I used a bread machine on the dough setting to mix the dough, then shaped, let them have a final rise, and popped them in the oven. Great, easy recipe!

Monkey Bread I

Great recipe! I saw this featured on a cooking show once and was incredibly intrigued, only they had modified it putting small chunks of cream cheese inside the dough puffs before baking. I did the same at home and these turned out fabulous. I also took others' advice to use a bundt pan, and layered the cinnamon sugar with the brown sugar and butter on every row. I omitted the raisins and used pecans since I didn't have any walnuts on hand. These turned out absolutely delicious. Careful though - they're highly addictive.

Sweet Potato Pie from EAGLE BRAND®

This recipe is my all-time favorite for sweet potato pie. Of course I have a major sweet tooth so I always modify my recipes, and this was no exception. I used one large yam and one large sweet potato for the filling, and added some cinnamon, allspice, a teeny bit more orange rind, and about a tablespoon of brown sugar. I then topped it with a layer of sugar-coated pecans and a layer of mini marshmallows in the last fifteen minutes of baking. The pecans melted a bit to make a wonderful caramelized glaze while the marshmallows browned lightly and looked beautiful. It was a sensation! People still bring it up to this day, and I've been asked to make it every Thanksgiving from now on.

Sugar Coated Pecans

These little babies were delicious! I made them ahead of time and then layered them on top of a sweet potato pie underneath mini marshmallows. Some of the glaze melted while it was in the oven and made the most scrumptious topping you could imagine. I got raves from family and friends and was asked to make it every holiday! We had about a quarter pound of the pecans left over and they were gone within the day. Excellent recipe.

Glazed Meatloaf I

When I first found this recipe, I was really excited because it appeared to mimic the recipe my mom used when I was growing up. However, I was a little disappointed when it finally came time to eat. The meat itself was kind of on the dry side and the glaze was just a bit too sweet and simultaneously tangy for my palate. Maybe I overcooked it? It's a possibility, so I can't fault the recipe for that. But I probably won't make this again, sorry. :(

Amish White Bread

This recipe is amazing! This is the second time I've ever made bread and it was so easy, not to mention really tasty. It's a little heavier than normal bread and very sweet, so we liked it best eaten on its own. This is my usually-unimpressed husband's favorite bread now.
