Strawberry Muffins

I thought it wouldn't be sweet enough, but didn't change anything except for the yield (I made 24). I think anything else would overpower the strawberries and strawberry muffins that don't taste like strawberries are kind of a let down. Only thing I changed was adding a single blueberry on the top (for 4th of July). Perhaps because blueberries are incredibly sweet to start with, it made up for the sugar glaze I was going to add if they weren't sweet enough.

Deep Dish Strawberry Pie

I have never liked traditional strawberry pie, I always found it way too sweet and way too fattening. I was incredibly worried about this one, especially when my strawberry goo thickened up pretty much immediately and I knew it wasn't going to survive 12-14 minutes on the burner. I took it off after 5 minutes and tasted it; my test taste must've had a pocket of lemon juice, it was terribly sour. However, this recipe turned out AMAZING! The lemon juice must've calmed down after cooling in the fridge (mine set in less than 2 hours). I never keep blueberries around because I tend to forget I have them and they go bad fairly quickly, so I used sliced kiwi instead. I can picture myself sitting on the beach drinking my frozen daiquiri and eating a slice of this beauty. The only thing I would do differently next time is use less chocolate (I used my own Wilton chocolate wafers and overdid it a bit).

Apple Cinnamon Cheesecake by EAGLE BRAND®

I was worried that this would be disgusting, but it wasn't! It's a very unique flavor. I felt like it should've had more cinnamon flavor, maybe a touch of nutmeg or cloves too. Perhaps a caramel sauce? Instead of oats, I used this Quaker granola oat cluster with almonds cereal that I wasn't a fan of (too hard on my teeth even after drenched in milk for a while). Didn't have any sweet condensed milk, so I used Cinnabon flavored coffee creamer. I also put in a few shakes of cardamom, because cardamom should go in everything. I don't keep frozen apple juice in the house, so I used apple sauce. The apple sauce worked great right up until I got to the glazing part (next time I think I'll use a caramel apple butter drizzle). Cooking the apple slices in the skillet took awhile; I sprinkled some white sugar and cinnamon on them while they cooked to help soften them up faster. I also had to cook it at least 10 minutes longer than the recipe said. Oh, and I mixed some water and powdered sugar for another glaze to make it sweeter.

Tsao Mi Fun (Taiwanese Fried Rice Noodles)

Something new for me! I used mung bean glass noodles and omitted the pork and cabbage (not a huge fan of cabbage and I just ate pork the day before). I also used regular mushrooms instead of the Chinese black ones, as they are hard to come by in my area without going to an overpriced specialty store. I also threw in some toasted sesame salad dressing.

Fiesta Tater Tot® Casserole

This turned out great! I think it'll be a new favorite. Incredibly filling and delicious! My grocery store doesn't carry the condensed nacho cheese soup, so I used two individual cups of a 4-pk of Chi-chi's nacho cheese dip and a can of Contadina tomato sauce. I omitted the milk because we only had almond milk on-hand and that didn't sound too appealing for this recipe.

This was so tasty! I made my own peach preserve for the filling. The only thing was it only made 2 kringles. The first one didn't come out so pretty or professional looking and had peach filling oozing out every which way... but it was soooo good! So for the next one I fixed the design flaws and crisscross it better.

Tanya's Snickerdoodles

Very tasty. I never have almond extract or cream of tartar on hand, so I didn't put those in, and I converted the recipe to 12 servings and rounded off the measurements, because it gets something along the lines of 1/3 cup 2 tbsp 1 tsp of X ingredient. 50 cookies is way too much for 2 people.
