Cajun Spice Seasoning Mix in a Jar

I changed this recipe to two servings just to try it out. It was very good! I cut salt in half though and used black pepper in place of the white. Otherwise didn't change a thing. I used the mix for a cajun fish recipe and it turned out great. Will make again!

Easy Apple Cinnamon Muffins

Very tasty! I increased the serving sizes to 8 and this recipe made 12 regular-sized muffins. I decreased the sugar to 3/4C and these were still too sweet for my tastes. Used 1/2 whole wheat flour with good results. Used granny smith apples which kept their shape. I left the topping off and these were still great without.

Grandma's Corn Chowder

Great soup! I've made this with and without bacon and it's good both ways. I also use just 1 teaspoon of salt and add 1/4 teaspoon of red pepper flakes to spice it up a bit. It's also nice to just leave the skins on the potatoes especially if you're using red skinned potatoes. I've also added chicken broth in place of the water for a flavor boost. Any way you make it, this recipe is a great basic recipe and can be altered and still turn out just fine.

Whole Wheat Refrigerator Rolls

Delicious! I used olive oil for the vegetable oil and otherwise followed the recipe exactly. My only complaints were that these were a bit sweet (will try less sugar next time) and seemed more like white rolls (will do half ww flour and half white flour next time).

Creamy Butternut Squash With Cinnamon Soup

This soup is exceptional. Just make sure you taste it after it's all put together. My squash must not have been very sweet because the soup just wasn't sweet enough and all of the spices gave is a bitter aftertaste. I added brown sugar one tablespoon at a time and by the time I'd added 3T it was perfect. I will make this again and again!

Applesauce Cake IV

I love that this cake uses simple ingredients AND tastes great! I replaced half of the flour with whole wheat flour and it turned out just fine...still very moist. I also made a simple glaze to top the cake with and make it extra special (1C icing sugar + 1/2 tsp vanilla + 3-4 tsp milk). This recipe is a definite keeper!

Minestrone Soup I

This soup was soooo good! I love that this recipe uses humble winter veggies and canned goods...I almost always have these ingredients on hand. I just made a few changes from the original recipe. I used 1T olive oil in place of all of that butter. I also used 1tsp basil and 1tsp oregano in place of the parsley. Also, for the pasta I used 1/2C of alphabet pasta which was a real hit with my three kids. Overall a great and versatile recipe!

Chocolate Chip Orange Zucchini Bread

I have been making this recipe for a couple of years now and it is by far my favorite zucchini bread recipe. I usually make a few changes to make it a bit healthier...and it still turns out great! I replace 1C all-purpose flour with whole wheat flour, I substitute applesauce for half of the oil and use only 1-1/2C sugar. Also, I use mini semisweet chips and have no problem with them sinking like the regular chips sometimes do. And be sure not to overbake it...it's best when it's still a bit soft in the middle. Thanks for a great recipe!!!

Zucchini Pineapple Bread I

It's probably not fair to rate this recipe when I made some changes...but I was just trying to make it a bit healthier. And it turned out great! I decreased the sugar to 1C, used only 1/2C oil plus 1/2C applesauce, 1-1/2C all-purpose flour plus 1-1/2C whole wheat flour and increased the cinnamon, baking soda and baking powder to 2tsp each. The loaves turned out beautifully...and quite a bit healthier than the original recipe.

These were just ok. They were a bit soft for a cookie (despite cooking them a little bit longer) and I found the dough a bit bland. I would rather save my zucchini for a cake or loaf.

Jo's Rosemary Bread

WOW! This bread is amazing. I made a couple of changes...I substituted whole wheat flour for half of the white flour. I also added a crushed garlic clove and 1/4 parmesan cheese to the dough. I made this by hand and baked it in a stone loaf pan for 25 minutes at 350 degrees. Great flavor and texture. I will be making this again and again.

Banana Wheat Bread

A good, healthy banana bread. I love that there is not refined sugar or flour in this recipe! My one complaint is that it's a bit dry...and I even tried adding an extra 1/2C mashed bananas. Definitely try not to overbake this! Also, chocolate chips are a yummy substitution for the nuts.

Oatmeal Cranberry White Chocolate Chunk Cookies

These were quite good but seemed to be missing something in terms of flavor. I would definitely recommend adding in some vanilla (I used 1-1/2 tsp)...and next time I will try adding some orange zest. Otherwise the texture of these cookies was great. Just be sure not to over-bake...mine were done after only 9 minutes.

Makeover Morning Glory Muffins

These muffins were so good and so healthy!!! A great combination. And the recipe is very forgiving...I used crushed pineapple instead of applesauce and left out the coconut (personal preference) and increased the nuts and raisins by 1/4 each to substitute for the coconut. They tuned out great! And my kids loved them! Great recipe...thank you!

Pie Crust III

I LOVE this recipe! I added 1t sugar and 1t salt and used whole wheat pastry flour instead of all-purpose flour. I also mixed the 6T of water with the oil before adding it to the flour mixture. I pressed it into two pie plates for quiches...delicious and easy!

Low-Fat Blueberry Bran Muffins

Sugar Cookie Glaze

I just tried this recipe for the first time and LOVED it. It's so much easier to use and finishes nicer than "icing". Be sure to double or triple the recipe though...this didn't make enough to cover an entire batch of sugar cookies.
