Cool Cucumber Salsa

Loved it! Only substitute I did was lemon juice for lime juice because I had no lime juice. Let it sit overnight - LOVED LOVED LOVED this recipe. Definitely a keeper.

Spicy Chicken Enchiladas

Awesome recipe! I had to substitute 1 pound of ground chicken with 1 pound of shredded chicken boneless breasts cooked with lots of seasoning the day before in crock pot. Had a hard time finding the rice mix in the 4.5 oz mine was 6.75 but still the recipe was an AWESOME recipe. No way you can mess this one up. A REPEAT FOR ME !

Awesome! I had been looking for this recipe for years. Reminds me of what I used to get from Pizza Hut but they no longer sell it. Thanks for sharing ! No changes left as is. Awesome dish!

Black Bean Dip

This recipe is wonderful. I had a huge amount of black beans and did not know what to do with them. Found this recipe and my husband loved it. Great for super bowl Sunday. Substitued chili powder with paprika, subtitued green chilis with jalopenos. Worked out just fine.

Country Banana Bread

Just wonderful. I only had 2 ripe bananas so I cut it in half and made a 8 x 8 cake pan. I thought it was more of a cake than a bread so I made a glaze with confectioners sugar and put it on top of the cake while hot and sealed with aluminum foil so it could melt into the cake. Just wonderful !
