About this Cook
I'm a third year University student, going for a Bachelor of Arts in Latin American Studies minoring in History and a Bachelor of Science in Archaeology (maya concentration). I only eat homemade meals unless I'm starving to death on campus and need a quick meal. I bake my own bread and make home-cooked meals every night regardless of what else is going on.
My favorite things to cook
Mexican foods, or at least my own version of it. According to a co-worker I am ruining his culture but I'm a vegetarian and a canadian so I suppose that will automatically change things up. I also enjoy making muffins since I can finally make them lighter - no more baseballs!!
My favorite family cooking traditions
Mashed potato Christmas, Thanksgiving, and Easter. Birthdays too if I'm lucky! My grandma makes the best mashed potatoes ever but refuses to do it unless it is a special occasion. Since I live in another province now and don't see them as much, whenever I visit my grandparents is considered a special occasion and I get my potatoes!!
My cooking triumphs
I can make pastry for pies. Seriously that is a huge crazy triumph for anyone who has (previously) tried my pies. They are better now, I promise!! :)
My cooking tragedies
Most recently it was a loaf of bread. I didn't have yeast but thought I could use a combination of baking powder and soda with lemon juice added as well. It of course resulted in a small hard little yellowish-green rock.

Cappuccino Muffins
Awesome awesome awesome!! I used Irish Cream instant coffee granules (here comes the list of substitutions), 3/4 cups brown sugar, 1/4 cup organic cane sugar, cornstarch instead of the egg, water instead of the milk. BUT very good. If I had the eggs and milk I would have used them, but such a great idea to use the instant coffee!! I will absolutely make these again!

Marmalade Turnovers
Exactly what I was looking for. I used fruit preserves instead of the marmalade simply because I'm not a fan of marmalade. I think it is important to mark them with a fork or something to let the steam out and prevent some of the oozing. Honestly though oozing is expected and I don't care because this is a yummy recipe!! Thank you for sharing :)

Mexican TVP and Cheese
I'm giving it a five but I did make some changes. I added some dijon mustard and light soy sauce to the tomatoes and onions. I put the TVP in a small glass casserole dish and then spooned over the tomato mixture and sort of pressed it into the cracks between the pieces. Then I put just over a cup of shredded marble cheese over top and baked it for 15 minutes at 350, then on broil for a couple minutes to finish it off. I really enjoyed this meal, but my boyfriend hated it. I think he's just scared of it!
