Parsnip Patties

The flavor is okay, but the texture was awful - just a soggy mess, with a crispy outer layer. On the second batch I tried adding more flour and bread crumbs, but still the same. And that was frying them for 20 minutes or so. Not gonna make these again. :-\

Creamy Hot Cocoa

Yep, absolutely fabulous. I used raw cow's milk, and skimmed off some cream to use for the half and half. Doubled the recipe with no trouble, but used only 1/2 cup of sugar per recipe and it was plenty sweet!

Potato Leek Soup I

Definitely expect to use a full two quarts of broth with this soup - with only six cups, it reminded me of mashed potatoes! I used four small leeks, the white and light green parts. The flavor was just about perfect.

Easy Baked Tilapia

Super simple, quick and easy. Even the kids loved it. I substituted fresh garden veggies for the bag of frozen vegetables - carrots, broccoli, and zucchini. And I used Mrs. Dash citrus herb seasoning instead of the Old Bay.

Peach Muffins

Wow, these were way too sweet for us. Even the kids commented on how it was hard to eat a whole one for the sweetness. Aside from that, the recipe worked out alright. I did add half a cup of milk as others did. If I made it again, I'll use either half the sugar, or follow another's suggestion of only 1 cup of brown sugar. I'd also decrease the cinnamon a bit - maybe 1 1/2 tsp. If you're looking for a peach cupcake, this might be just the recipe for you.

Stuffed Pattypan Squash

Tried this recipe just as it's written, altered for 4 servings. The kids loved it, I loved it, and none of us love squash. When I make it again, I'll use some fresh herbs to give it a bit more flavor, but it really was fantastic.

Macaroni and Cheese V

Definitely too many bread crumbs. Next time I'll either skip them completely or do about 1/4 of a cup. I didn't use mustard since I didn't have any, but I think that would've helped the flavor. Next time I'll also probably put layers of plain grated cheddar in the pasta like my mama used to, then pour the sauce on top after that. Not bad though, for real cheese instead of the processed junk.

Chocolate Zucchini Bread I

Really, really great stuff. I subbed 6 tbsp cocoa powder and 2 tbsp coconut oil for the chocolate squares, whole wheat pastry flour instead of white flour, and raw cane sugar instead of white... worked great, absolutely delicious! Thanks for giving me a way to use up all this zucchini!

Peach Salsa II

A fabulous salsa. I've canned several pints each peach season for the past couple of years. I don't add as many jalapenos though - we don't like it too spicy. I just add them until it tastes just right, and it gets spicier as it sits, too. Friends and family rave about this salsa and are always asking for another jar!
