Tofu Chocolate Pudding

I thought it was pretty good. My kids loved it! I had to add a lot more milk than what the recipe called for. I also added about a Tbs of honey.

Salsa Chicken

Yummy! This is such an easy and tasty dinner. Very flavorful, and the chicken was not dry. I will be making this a lot. Next time I might add some lime juice.

Polish Poppy Seed Cookies

This is almost identical to the Polish Butter Cookie recipe that has been handed down in my family! The only major difference is we hard boil *all* of the eggs. To crumble to yolks, pushing them through a sieve works well. Also, we not only use poppy seeds, but any kind of sprinkles (red and green for christmas!) to top them. It has been a family favorite for many years!

Pumpkin Bread

I've never made pumpkin bread before, but it sounded yummy, and festive for the holidays. I thought 3 cups of sugar sounded like a lot, so I only used 2 cups, and it has just enough sweetness. But could use some salt. Next time, i'll add ½ tea salt or maybe more...Oh, i also added some chopped walnuts --sprinkled on the top of the loaf (because i forgot to add to the batter) and it's a nice touch. It makes a tastey, easy and quick breakfast for hubby and me!
