Zucchini Herb Casserole

I have to give this five stars because my 9 year old daughter ate it! She only eats the basic veggies like corn, green beans, carrots, or potatoes and she hates tomatoes and zuchinni, as does my partner and they both ate it...my daughter even had seconds! Changes I made was to add more herbs and a pinch of salt, I used 3/4 can of petite diced tomatoes, drained, added red onion with the green onion. It was delicious and I am excited to serve it again because I can get more variety of veggies into my family!

Chicken Noodle Casserole

I was pleasently suprised by this casserole since I do not like chicken noodle soup and I did not think it was a lot of work to make...I made this for a Sunday lunch when my mother-in-law came to visit and she loved it also, even my casserole hating partner ate it and went back for seconds. The only changes I made was instead of savory I used a bit of thyme and sage, and instead of egg noodles I used penne pasta, I added some red onion, and topped it with buttered cracker crumbs. This was the first time an entire casserole disappeared and I would/will make it again.

Creamy Tortellini

It was not the worst thing I ever ate, but something just is not right with this, and it never really creamed up. One thing I would recommend it that you do not put the tortellini in the sauce until the sauce is all cooked up.

Best Big, Fat, Chewy Chocolate Chip Cookie

Not only were these too sweet but the chewy only lasted about five minutes while they were warm...you could literally trace the evolution of crunchy/crispy setting in as the cookie cooled. I will not be making again as I cannot figure out what went wrong since I followed the recipe to the letter.

Mexican Wedding Cakes II

Though this cookie is edible, it tastes more like a nutty flour ball rolled in powdered sugar. Pretty disapointed...I think more vanilla and more sugar is called for in order to get a taste going other than the nut and flour.

Pizza Casserole

I made this for a group of my Girl Scouts who came for supper...I used Italian pork sausage instead of burger, added a bit of crushed red pepper, olives and mushrooms(canned)more pepperoni, Italian seasoning to change it up a bit. The recipe did not taste like pizza but was very good and the kids enjoyed it for the most part. Oh and I also used rotini noodles instead of egg noodles.

Biscotti Toscani

I have never cared for Biscotti but after my girlfriend saw it made on TV and said she had never even heard of it I decided to make her some. This recipe was fantastic, not only was it easy to do, it tasted great! The only changes I made was to add a dash of cinnamon, a lot more almond extract and sliced almonds and no chocolate. I made these cookies for my 9 year old daughters Girl Scout troop and drizzled with chocolate and they loved them too. Who knew kids would like what I consider such a grownup cookie :) Strongly recommend as a jumping base for any biscotti, will make again.

Southwestern Casserole

I rated this a 4 star because we were not falling out of our chairs in love with it, but it was quite good, filling, easy, and will make it into the dinner arsenal. I felt the meal was bland even after adding the seasonings so I added a package of Taco seasoning and a dash of salt, this really helped. I also added 1/4 cup water to the pot as it seemed dry to me, I added a can of corn. After the macaroni was done, I mixed a half bag of shredded mexican cheese in the pot then added the macaroni, mixed it all up and topped with M.Jack cheese. This meal was NOT too much heat for the kids like I feared, perhaps because I cooked the jalapeno with the meat, garlic, and onions instead of sprinkling them on top, The children (picky eaters) even asked for seconds. I served this with sour cream and some white corn chips.

Baked Garlic Parmesan Chicken

Our family really enjoyed this chicken. This meal was extremely flavorful, and juicy, perhaps adjusting the spices to our liking did it. I would recommend this to anyone who would like to try something a bit different for dinner. I did make the following changes: I allowed the minced garlic to sit in the oil for about 10 mins. and added Italian seasoning and garlic powder to the bread crumbs. I also used Italian bread crumbs and pounded out the chicken into thin cutlets, turned it under the broiler for five minutes and topped with shredded mozzarella while under the broiler.

Eggnog Thumbprints

I altered this recipe but would stil recommend it. The cookie is a good base, but I prefer something softer so next time I will use a different thumbprint base. What made the cookie was the frosting...and I think you could do this frosting without the thumprint. I did not use rum instead I used a tbsp of eggnog and then sprinkled a little nutmeg in the frosting mix. I also sprinkled nutmeg on top of the cookie. People who did not like eggnog liked these cookies. Will make again I think.

Pecan Pie

This is the first time I made pecan pie and I was always told it was difficult and tempermental to do...if that is true then this recipe is for everyone who is scared to try pecan pie :) Easy and delicious, family who claimed to hate pecan pie or nutty pies loved this one. Thanks for sharing.

Baby Ruth Cookies

Not a good cookie, and as someone who makes a lot of cookies I could tell as I was making them they were going to be a disaster. The candy melts faster than the cookie bakes and then sticks to the pan (which is hard to do because it is nonstick) and the cookie kind of flattened and melted before it even had time to bake. I threw the batter away after the first batch...sorry.

Jam Filled Butter Cookies

I think this is a wonderful cookie, easy to make, ingredients all bakers should have in their pantry at a moments notice, quick. I found it to be a light and buttery cookie...also I hate overly sweet and this was not overly sweet at all.

Linda's Monster Cookies

My girlfriend has begged me to never make these cookies again as she loved them SO much. I substituted the butter for peanut butter, added 1/3 cup coconut, 1 cup peanut butter chips, 1 cup chopped walnuts. Everything else I kept the same and our family raved about them.

Apple-Raisin French Toast Casserole

This was pretty bland and the kids had to add syrup to even touch it. I do not think I will make it again. It did not make a whole lot of servings and I used more eggs and time than if I had just made the french toast traditionally.

White Chili I

I am giving this recipe five stars because it was a good jumping point for a white chili. I did not follow this recipe exact...I used ground turkey instead of chicken cubes because I usually use ground beef in my regular chili. I also seasoned the turkey with poultry seasoning, garlic powder, white pepper and cayenne. I did not drain the beans (which were white northern)and I added a bit of flour to thicken. In addition I added some shredded mont jack cheese and pepper jack cheese to thicken. I added crushed red pepper and white pepper to the dish. Then I let it all simmer about 30 minutes. All in all the meal came out with a bite and thick just like chili and quite delicious!

Basil Shrimp

I followed the recipe exactly but my family felt these were too mustardy tasting. They are not fans of any type of mustard except honey mustard...so I do not think I will make them again or else I will alter the recipe.

Grilled Delmonico Steaks

These were very good, seasoned so much that you do not even need steak sauce when eating. I did not think that they moistened the steak up however and I left the salt out all together because I know it can toughen steak. Of course it could be because we cooked the steaks on the grill. Despite this we will definately make them again with all different cuts of meat!

Sloppy Joes II

My family enjoyed this recipe very much. I had to omit the green peppers and onions for family member preference but I used onion powder in place of onions. I also omitted the brown sugar and used Famous Dave's Sweet and Sassy BBQ Sauce. I do not think we will ever go back to Manwich again.
