The Best Vegetarian Chili in the World

I almost gave this four stars because I halved the recipe, except the jalapenos, and I didn't think it was that spicy. But it was still really really good. I strained and rinsed all the beans and added a little vegetable broth and some okra. My meat-eating boyfriend loved it.

Spinach Lentil Soup

I made this for dinner tonight, substituting Italian veggie sausage for the kielbasa and veggie broth instead of chicken (we're vegetarians) and this turned out fantastic. It's so rare that I can find a meaty recipe and can convert it but keep it relatively the same. My husband LOVED it! Thanks!

Tomato-Curry Lentil Stew

This was an awesome soup. I added potatoes and the only tomatoes I had were "balsamic vinegar, basil and olive oil". I was a little worried it would clash with the curry powder but it turned out fabulous! I also used vegetable broth instead of water.

Italian Bread Bowls

These were great! I'm new to baking bread and my stuff never turns out perfect but these could not have been better. I added a little garlic powder and oregano on top like some others suggested.

Butter Chickpea Curry

This was great, even my picky two year old LOVED it (aside from the onions, which she picked out). I ended up adding more spice than this called for, and used tomato paste instead of soup (it's what I had on hand) so I had to add a little water. I would also recommend adding extra coriander powder- the coriander with the chickpeas was awesome. I also subbed yogurt for the milk.

Indian Rice (Pulao)

This was so much better than serving plain rice with Indian dishes, like I was doing before. I'll be making this from now on! I halved the recipe, used turmeric instead of saffron and used butter instead of shortening.

Quinoa and Black Beans

This was good! I'd had a box of quinoa sitting in my pantry for awhile and was looking for a recipe to try. I didn't have everything the recipe called for, but I'm looking forward to making this recipe again with the "correct" ingredients!

Baingan Bharta (Eggplant Curry)

This turned out pretty good. I'd never cooked or eaten eggplant so I really didn't know what to expect and after reading the reviews I don't think I cooked the eggplant long enough. I added more spice than was recommended and added peas instead of tomatoes (not a fan). It tasted great! My husband LOVED it!

Spanish Rice II

I'd probably give this recipe, as is, a 3.5. It needs quite a few alterations, such a cumin (!!) and broth instead of water. I also agree with the people who rated this saying there were too many tomatoes. I use less than half a 10 oz can and that's plenty. Following the recipe exactly will produce rice that's too tomatoey and quite bland!

Oatmeal Chocolate Chip Pancakes

These were pretty good! The texture was a little off (this was my first attempt at vegan pancakes) but the taste was fantastic! I didn't have chocolate chips or raisins, and I added applesauce, cinnamon and a little sugar and vanilla. Will be making these again (although I might try adding an egg or egg substitute)!

This is one of the greatest veggie burger recipes I've ever had! We've completely transformed the recipe to our own liking now (just getting around to reviewing this), but the original is great!

While this didn't taste very authentic to me, it was still great. I make it pretty regularly now. Although I think I'm going to start making it with paneer instead of tofu.

Applesauce Oatmeal Cookies

The texture was a little soft, I prefer a crunchier cookie. But overall this was good. I added a little vanilla and I didn't have brown sugar so I used white and added a little maple syrup. I felt it was lacking a little, next time I may add raisins or something else.

Oven Baked Potato Wedges

This was awful. I used olive oil and cooked at 450 as the reviews recommended and it just doesn't taste good. The texture of the bread crumbs doesn't go well with the potato. I wouldn't make this again as directed, although I may try frying them.
