Balsamic Roasted Pork Loin

This is really excellent, especially in it's simplicity. I added some garlic and some raw organic honey. I didn't have time to marinate, but I did quickly brown each side to hopefully seal in some of the flavors. Then I followed everything else, and it was perfection.

Butternut Squash Soup

This recipe is good, but I think it calls for too much cream cheese. When I was in the final stages of prep, I was thinking, wow, I LOVE creamy things - I mean I make my morning coffee as a heavy whip misto - but I thought I'd start small with half the amount of cream cheese - and it was still very heavy. When I make again, I think I will do with 1/4 the amount. I have to imagine that this is a typo, because I feel like this recipe is for butternut squash flavored cream cheese. Other than this - the recipe is quite fantastic! I used real butter, add some garlic and extra cayenne, and also added salt as I use homemade stock that does not have any.

Kalua Pig in a Slow Cooker

This recipe is delicious. The only thing I changed was I used pink himalayan sea salt and added cabbage in the last couple of hours -it was perfect. I will try with hawaiian salt and using a banana as others have suggested. With the original measurements, I had left overs for a week.

Scallops and Asparagus Stir-Fry

I used only olive oil, canned no-salt-added asparagus, frozen scallops, red onions instead of green, flour instead of starch, no tomatoes, and added garlic salt and pepper. Tasted wonderful! I ate it without rice, my boyfriend wanted the rice. I had some squash soup as a side and was very full and satisfied. Healthy and yummy, will definitely make it again.
