Creamy Hot Cocoa

I cut down on the sugar and it was still way too sweet. While generally not a problem for me, this was very cocoa-y. I guess I wanted more of a chocolate taste, and something a little creamier. I might next time use baking squares instead of powdered cocoa.

Best Tuna Melt (New Jersey Diner Style)

This was okay, but I wouldn't make it again. Not the melt I was looking for. But the tuna salad was good by itself for just a plain sandwich on white bread.

Chicken American

The taste was good, but the construction seemed all wrong. Breading fell off, American cheese got stiff. My suggestion would be to add a couple of tbsp of butter to the canola when pan frying the chicken. I do this in other recipes and never have problems with the breading staying on. Also, I'd bake the chicken for about 5-10 mins, then add the bacon and cheese. Or just wait until it comes out of the oven and use a little cheese sauce to pour on the breasts. I had high hopes for this one, but it just didn't come out quite as well as I hoped it would.

Ukrainian Meat Filled Cabbage Rolls

Excellent trip off of the beaten path! We don't use ground pork, so I used beef instead and it was still wonderful. I also followed the vinegar boil suggestion and it was perfection. I made mine HUGE, and that made 6 big rolls. I could have eaten them all--beefy, chewy from the cabbage, hearty from the stuffing ingredients (I used rice and oatmeal), and zippy from the sour cream and dill combo. Will definitely make again!

Cookies 'n' Creme Fudge

This had a great taste, but I did a few things according to other's suggestions that I wouldn't do again, thus only 4 stars. I used white chocolate chips, and next time I'd definitely go with the baking squares so that my fudge comes out firmer. As much as I love the chocolate cookies, I'd cut the amount into a little over half. It was just too much. Also, I'd break them into 6-8 pieces a piece, rather than 4-5 pieces. Lastly, instead of mixing the cookies into the chocolate, I'd pour down a layer of fudge, sprinkle cookies on top, and pour the remaining fudge on. This also took a long time to set.

Chicken Noodle Casserole I

Really easy, really yummy--what more can you ask for?! I made a low fat version, adding a tbsp of mustard, canned mushrooms, and a cup of cheese on top. I'm probably going to add this to my hard copy recipe book.

Monkey Bread I

The taste is okay, but the butter/brown sugar syrup kind of gets hard in the bottom of the pan, so when you turn it upside down and take it out of the pan, you have a hardened crust on the top. I probably wouldn't make this recipe again.

Pumpkin Pancakes

I make pancakes every weekend for breakfast and never have I had a batch turn out as soggy as these! The flavor was good, but eating a pancake that feels like batter in your mouth kind of takes away from that. I followed the directions, but they still just were not to my liking. I'll stick to my old recipe.

Kheer (Rice Pudding)

4 stars b/c I changed the recipe and it's awesome now! I used 3 cups whole milk, 1 cup coconut milk, and added 1 tbsp extra sugar, 1/2 tsp cinnamon, and 1/2 tsp vanilla. I left out the raisins, rose water, and pistachios, and instead toasted almond slivers to mix in. I also cooked it for 40 mins to get the right consistency for the rice. I had to add about 1/2 cup more milk after it cooled a bit. Amazing! It tastes almost identical to the kheer at my local indian restaurant (served cold).

Chicken Tetrazzini IV

This recipe is only okay. I'm not a chicken tetrazzini purist, but I much prefer the "Easy Chicken Tetrazzini" recipe by Marian Collins. It's easier, doesn't require as many ingredients, and just has a better taste--uses cream of chicken soup as part of the sauce. I'm not fond of the sherry in this recipe, it needs more salt, and just something isn't satisfying about the flavor. We'll eat it and enjoy it, but I won't make it again.

Gazpacho

A great base recipe! I made a few changes to suit my taste and needs. 3 cups V-8, 1/2 of a small onion and pepper, used 2 cloves garlic, subbed balsamic vinegar for red wine, omitted tarragon, used fresh basil, and subbed cilantro for parsley. Also added a tsp sea salt. Perfecto!

Buttermilk Chocolate Bread

This was so amazing! I used only 1/2 the margarine, and subbed the rest with applesauce. Also I added a cup of chocolate chips. It turned out perfectly rich, moist, and delicious. It was gone in two days at our house!!! I did not like the honey butter though, and I definitely don't think it needs it, especially if you add the chocolate chips. This is definitely a keeper!

Michelle's Peanut Butter Marbled Brownies

Now THIS is the good stuff! I did as the several other reviews suggested and used a whole 8 oz pkg of cream cheese. Otherwise, I made them according to the recipe. These were perfect. Rich, chewy, chocolatey, peanut buttery, everything I wanted! I sent a large plate to work with my husband and they got rave reviews there too. Big hit. I'll make these over and over again!

Chocolate Peanut Butter Brownies

Followed recipe exactly and I got a greasy, hardly cooked, flat pan of batter. While making this recipe, I'm wondering why they are even called brownies. There is no chocolate other than the chocolate chips you sprinkle on top. Not even the topping was that great. Won't be making again.

Frosted Banana Bars

We are doing weight watchers, so I totally changed this to be much lower in fat and calories and it still turned out great! Instead of 1/2 cup of butter, I used 1/4 margarine plus 1/3 cup applesauce; substituted splenda for 1/2 the sugar; added an additional 1/4 cup of flour; and used 3 ripe bananas. No frosting for us, but these were still moist, delicious, and plenty indulgent! I made them into mini-muffins (baked 350F for 15 mins), and you get 2 for 1 point! YUM!

I altered this recipe slightly, and it is absolutely perfect! I used an entire pkg of yeast, doubled the honey, and used 1 egg plus 3 yolks--all at the suggestion of another review. This bread is soft, slightly sweet, perfectly tender and chewy, just wonderful! I can't say enough good things!

Chocolate Chocolate Chip Nut Muffins

I changed the recipe as the others suggested, but these were far from "perfect". I upped the milk, cocoa, and added an egg. This just didn't do it for me. Whenever I make "cakelike" recipes, I always add 2 tbsp of cornstarch per cup of flour to improve the texture. I think this recipe could really benefit from that. My muffins looked NOTHING like the photo; mine were flat and shiny. Not a keeper recipe.

Lemon Cheesecake

Light, airy texture, but really just a run-of-the-mill cheesecake. I added extra lemon oil b/c I didn't have lemon zest, and also used 2 eggs instead of egg substitute. It was good, but I'll probably stick with my tried and true recipe, and just add lemon to that one.

Lentils and Rice with Fried Onions (Mujadarrah)

I have no idea how this recipe has such great reviews. I had high expectations, but there was no flavor--other than the extra spices I added, and even those didn't help tremendously. I've never eaten a middle eastern dish that didn't at least include garlic or lemon juice--and I love that cuisine. By the time I added spices, it ended up tasting like a bad creole dish. This recipe is going right in the trash.
