Spring Rolls

Warning, these are addictive! Even with a few substitutions (our local grocery didn't have all the correct ingredients), these were the best spring rolls we have ever had. My husband couldn't stop eating them!! They were not as time intensive as I expected, and we were able to freeze half of them to eat at a later date.

Jo's Rosemary Bread

I made this with @2 tbsp fresh rosemary from my garden, and it can't be beat. What a terrific recipe! My inlaws were visiting and no one could stop eating the bread, the entire loaf was gone in no time at all.

Indian Saffron Rice

I had to use spanish saffron threads (it was all I could find) but this still turned out really well for us. My husband vastly prefers it over the storebought kind.

Hummus III

This was good, but not our favorite ever hummus. It came out a little more thick than it should have been, next time I would thin it with a little extra liquid from the beans.

Peach Preserves

I have tried making and canning 3 different recipes for peach preserves and this is by far our favorite. I love that you don't peel the peaches, it made it much easier to prepare and the skins added a lovely rosy color to the preserves. Also, since they are diced instead of sliced, they seem to hold their shape a little better and not all float to the top of the jar. I read that in preserves, the liquid should be about the thickness of honey, and that is how it turned out for me, not too liquid at all, but also not too sticky to spread. We have given jars of these preserves as gifts and gotten rave reviews.

Carry Cake with Strawberries and Whipped Cream

The cream filling elevates this dessert to a great level, it goes so well with the strawberries and with coconut also. However, the first time I tried baking the cake, it was overcooked, dry, and brownish after only 45 minutes. Luckily I had enough ingredients left for a second cake, so I tried again and watched it very closely! At 35 minutes, the cake was almost perfectly done, especially when you consider that it will continue to cook a bit longer until removed from the pan. It turned out to be a delicious dessert and we will look forward to having it again.

Key Lime Cookies I

I didn't read the reviews before trying these so it didn't occur to me to add extra flour. I did end up having to refrigerate these overnight so the dough would be stiff enough to make into balls. I dipped them in green sugar for Christmas and when cooked, they flattened out with nice brown edges. They are very lime-y, I think I might try them with lemon or orange instead next time. 3 stars b/c it was a lot of trouble to figure out how to "fix" the recipe. But worth making.

Cheese Garlic Biscuits I

I halved the recipe and added in 1/8 tsp garlic powder like other reviewers suggested. I also brused on the garlic butter at halfway cooked and when finished. I used skim milk and the finely shredded store brand of mexican cheese blend and the biscuits were very light, not heavy at all. My husband thought theses were even better than those at the restaurant and requested them again the very next evening!!

Get-Well Custard

My family has an aversion to nutmeg so I sprinkled cocoa powder on top instead and served the custard with fresh raspberries and blackberries. Neither my husband, my 1-year old, nor I could get enough - the whole dish was finished in the blink of an eye! This is wonderful comfort food.

Currant Scone Mix

I made this for family and friends at Christmas and got rave reviews and recipe requests. I substituted craisins for the currants. ETA: I have made these multiple times over the past 4 years. They make great teacher gifts (combined with a jar of homemade and home-canned lemon curd, marmalade, or jam), etc., and I always get rave reviews after giving them. I've had the recipe requested a few times as well (although many of the people I give them to are not bakers). I tend to use a combination of white whole wheat and AP flour and all organic ingredients for the rest. With these high quality ingredients, the finished product is really yummy as well as being healthier. This recipe is definitely a keeper, thanks!

Strawberry Avocado Salad

I was out of cider vinegar and had to substitute red wine vinegar. This was so simple and so delicious!! We both cleaned our bowls. We'll defintiely make it again, maybe with some blue cheese on top. Thank you!

Pope's Valentine Cookies

These are such great cookies for kids to make since they don't have egg in them. You can snack on the cookie dough to your hearts content. My husband especially enjoyed these and he is picky when it comes to cookies. My 1 yr old loved the ones in a car shape and his friends really liked the valentine shaped ones. Next time I'll try icing instead of sprinkles.

Hasty Chocolate Pudding

I was pregnant and craving chocolate pudding, and this fit the bill. Maybe not the hands down best we've ever made but the convenience made up for it. Also, the first time I tried it, it seemed thick enough before we added the butter and vanilla but it wasn't and didn't set up in the fridge - I stuck it back in the microwave for a couple minutes and it thickened just fine! It was great that we could "rescue" it. Very yummy, and my 1 year old couldn't get enough. Good made with part coconut milk too as a previous reviewer suggested. I might try evaporated milk next time so it is creamier....

Easy Toffee Bars

These are great and so easy to make! They are addictive, and the recipe makes a lot! I added in some peanut butter to the brown sugar and butter, it is really good that way with the chocolate. I wouldn't use as much butter next time, but would use a bit more peanut butter instead. I found the mixture to be a little greasy. I did let it boil a few minutes longer to get thicker (the pb helped with this too) and I lined the pan with foil (sprayed with butter flavored pam) before putting the crackers down, I haven't had any clean up problems at all. Everyone in my family loves them.

Strawberry Vinaigrette

This is a great dressing! I added in a tiny bit of sugar since we like our fruity dressings a little bit sweet, and had to omit the tarragon (I didn't have any). Yum!

Creamy White Wine Sauce

I made a half recipe of this to serve over chicken and proscuitto with mashed potatoes. I cut the salt in half as previous reviewers suggested, and added a little minced garlic. I also fixed the sauce in the pan that I had sauteed the chicken in, so there was a bit of olive oil and other spices. It was delicious, we'll definitely make it this way again. Thanks!

Breadless Stuffing

We've never been big on bread stuffings, but we love chickpeas, so we decided to give this recipe a try for Thanksgiving. It was a keeper! The leftovers tasted even better the next day. I've already been asked to share the recipe. Thanks!

Teriyaki Turkey Breast

My two year old liked this a lot. It was not bad, but we probably would not make it again. I used a boneless breast instead of a bone-in one (cooked for less time accordingly), so maybe that made a difference in flavor.

Bow Ties with Sausage, Tomatoes and Cream

This has been a favorite recipe of ours for 5 years now. I have made it with all kinds of variations - fresh tomatoes vs diced canned ones, half and half instead of cream, adding spinach, mushrooms, zucchini, or other veggies, and I always use local pork sausage since we prefer fresh natural sausage with no added nitrates. Each time I make it for friends or family, I get asked to share the recipe. Thanks so much for this great recipe!
