Almond-Tipped Shortbread Fingers

these were very good, but didn't taste quite as good as they looked. I'm not sure how they got them to stay round in the picture, even when I refrigerated mine overnight before baking, they still flattened out when they baked. They still looked very attractive on the cookie platter though! I think I would try using almond extract instead of vanilla (per another reviewer) next time, that might add the extra special bit needed to take the flavor to the next level? I dipped some in white chocolate with almonds, some in semisweet chocolate with pecans and some with almonds, and some in melted cinnamon chips with pecans and some with almonds. The white chocolate (I used ghirardelli baking chips) and cinnamon chips don't melt smoothly to coat, but it helps if you add a few drops to 1/2 tsp coconut oil (not too much, or they won't solidify again). The semisweet chocolate was definitely the easiest for dipping, whereas the cookies sometimes crumbled or broke in the white chocolate because it is more solid. Of course even the broken ones got gobbled up very quickly!

Ali's Green Sauce

I am not from TX, so I'm not sure what restaurant this refers to and don't have a point of comparison. I had some green tomatoes to use up so I figured I would give this a try (we like tex mex). I followed the recipe closely except left the seeds in the peppers as other reviewers suggested. This was pretty good, but not lifechanging or a standout. My family prefers guacamole and also roasted tomatillo green salsa, so I'll make those next time instead of using those ingredients to make this, it is not bad, but it's not as good as either of those either. It was fun to try something new though.

Spicy Roasted Pumpkin Seeds

I only had about 2 cups of pumpkin seeds. I cut the butter to 2 tsp (I find that it only needs about 1 tsp per cup usually) and the seasoned salt to 1 1/2 tsp but kept the garlic powder the same. I did not add regular salt, I didn't think it was necessary. I checked at 45 min and they were done and did not need further cooking. We thought these were good, but not the best we have ever made. I might add more garlic powder next time (my husband is a big garlic fan).

Roasted Pumpkin Seeds

Mulligatawny Soup I

I made this with fresh local organic veggies and chicken that was still walking around the farm earlier this week. I thought it was really good, such a nice fall and winter soup. However, my husband and sons were not big fans. They ate the chicken but nothing else. I followed the recipe pretty closely except substituted brown rice for the white rice (I added it at the same time as the broth so it would have time to cook) and used my immersion blender to blend everything else together before adding the chicken at the very end. I was tempted to add a can of coconut milk, but I wanted to try it as written first. I will probably make it again sometime when my husband is out of town or if I have friends over for lunch, etc. since I really enjoyed it even though he did not.

Italian Restaurant-Style Dressing

This was pretty good. It really does taste quite similar to O.G's - wish I had seen this recipe when I was craving their salad while pregnant (and lived 45 min away). I'm not loving the corn syrup, as we try to avoid GMO ingredients. Might experiment with agave nectar or honey next time.

Baked French Fries I

I didn't have 45 min, so I cut these very thin and they only needed about 20 min. to bake. My husband liked them a lot, but the kids wouldn't touch them.

Roasted Tomatillo and Garlic Salsa

This was very good, and it seems to be a forgiving recipe. I forgot to pick up cilantro and garlic making it, so my charred veggies had to wait a day before being blended together and they still turned out great. I ended up just subbing minced garlic for the roasted cloves, I'm sure it would be even better if I had roasted the garlic like the recipe called for. I also added about half a small onion like some reviewers suggested. And I only had 2 jalapenos so I subbed a hot cherry pepper for the third. My only complaint is that it really just tasted like spicy cilantro to me. The tomatillo taste didn't really come through like I had expected. Next time I will use more tomatillos or a smaller bunch of cilantro. Thanks for the recipe! ETA: I need to change this from 4 to 5 stars. After it sat in the fridge for a few hours, the strong cilantro taste had faded and the other flavors came through. After a couple days of the flavors mingling, it was amazing! It makes for a life-changing good taco topping as well. My husband said if we had this all the time, he would never need hot sauce, the flavor of the salsa is just so much better. Next summer I am going to seek out bulk tomatillos so I can make a lot of this and can it. YUM!!

Blue Cheese Green Beans

I wasn't sure about this but figured I'd give it a try, since I love green beans and blue cheese both. I'm sure it would have been tasty with the bacon, but we are not big bacon eaters so I didn't have any to try with it. The dressing was good, and I liked it on the beans, but probably not enough to make them that way again. The kids wouldn't touch it, and my hubby ate most of his serving but didn't seem overly impressed. It was fun to try something different though! thanks for the recipe.

Wonderful Waffles

These were pretty good. I followed the recipe exactly (only a tiny bit of yolk got in with the egg whites so they didn't whip up as much as they would otherwise have done). We liked them but didn't think they were our favorite waffles ever. Like past reviewers said, there just wasn't that much flavor, even when I added blueberries.

P.J.'s Fresh Corn Salad

My husband is not generally a fan of raw veggies, but he thought this was fantastic and ate almost the entire bowl by himself. I thought it was pretty good, but none of the kids would eat it. Thanks for helping me find a veggie recipe that got such high praise from my husband! I used the creamy Italian Dressing recipe from this site and that seemed to work well.

Creamy Italian Dressing I

It's been years since I have had Italian dressing, but I needed some for another recipe on this site, so I figured I would give this a try. It is pretty good. I used half as small yellow onion and it was not at all oniony as one reviewer had mentioned - perhaps they used a larger onion than I did. The only alteration I made was to sub 1/2 tsp minced garlic for the garlic powder. That seems like a nice amount, you can taste the garlic but it is not overpowering. I am looking forward to seeing how it tastes after it has rested overnight and allowed the flavors to mingle, but as of now, I am pretty pleased with the recipe, it gave me what I expected and needed, although it did not knock my socks off.

Watermelon and Strawberry Lemonade

This was okay, but I don't think I will be making it again. If I did, I would strain it, like other reviewers mentioned. It didn't taste very lemonade-y to me and was rather thick.

Cucumber-Watermelon Salad

This was really disappointing for us. To be fair, I got called away in the middle of making it, and the watermelon and cucumber had to sit (after being tossed with the salt and sugar) for a while before I added the balsamic vinegar. When I came back, there was a lot of liquid to pour off. Otherwise, I followed the recipe exactly, but we weren't huge fans of the results. The cucumber tasted really salty, and overall it seemed like a waste of good ingredients (including a superb balsamic vinegar, the best I've ever had). The baby liked it, but no one else was wowed. I thought I would have liked to try it with feta like other reviewers suggested, but given how salty the cukes were, I don't think it would have been a good mix. I'm not sure if the wait really made that big of a difference, but I won't be trying it again to find out.

Watermelon Cooler Slushy

This was pretty good! I substituted three handsful of frozen strawberries for the ice cubes, as other reviewers suggested. I also only had bottled lime juice, so I used 1/4 cup of that, which tasted like the right amount. I am glad I didn't use more. I subbed agave nectar for the sugar to make it a little healthier. My husband agreed that it would taste better spiked with alcohol, but the kids all enjoyed it, it was a nice treat for them and a great way to use up extra watermelon. Thanks!

Lemon Pepper Cod

My husband and I both thought this was okay, but not great. My children each took one bite and refused to eat the rest. I thought they would like it because lemon pepper tilapia and trout is their favorite meal and they eat as much of it as I can give to them. This just didn't appeal that much to us.

Best Fried Green Tomatoes

I prepared these exactly according to the recipe (only cut in half because we did not have or need that many). I thought they were pretty good, and the baby liked them. But my husband and older children did not care for them. I think it was because the tomato turned out to be very sweet and they didn't like the sweet/salty combination. Thanks!

Big Chocolate Cookies

WOW! These were amazing. I made them exactly according to the recipe except I accidentally only used 1 tsp of instant coffee and I would not change a thing. They're almost like a brownie in cookie form, and they are so so delicious, both warm from the oven and cooled later on. I used my 3 tbsp cookie scoop and got 11 gorgeous cookies. My kids devoured them and asked for more. The only thing I might do is lightly spray the pan next time, they stuck a little. But there will definitely be a next time, these were A++++ cookies and I'm already looking forward to making them again next time I need a chocolate fix. Thanks so much for the great recipe! ETA: We can't stop thinking about these, over a week later, I'm about to make them again. I would strongly recommend following the recipe the way it is written and not adding more flour, even if you are tempted to. When cooked, the texture of these is absolutely perfect, I think adding too much flour would really mess that up.
