Chocolate Spice cake

About this Cook
My favorite things to cook
I love baking, and making cakes. It's not so healthy though! For main meals, there's nothing so satisfying as making a lasagne from scratch.
My cooking tragedies
The time I made chocolate cake with stir-fry oil :-( I didn't realise it would taste like curry! A bizarre combination.

Whole Wheat Zucchini Herb Bread
This bread did not rise well for me, even with the addition of citric acid which usually makes the difference for wholewheat loaves. I felt it could do with much more fresh basil for flavour. Otherwise a reasonable bread, crumbly but thick. Best for toasting. I made another loaf just with basic white bread recipe, but replaced just over 1/2cup water with a medium zucchini grated. It was delicious, and rose well.

Apple Cake I
Excellent recipe, not too much work. Mine took a lot more baking though, after 30 minutes it was well browned on top but not cooked in the middle so I had to turn the temperature down and cook it for another 25 minutes. I have an electric fan oven, but it is getting old now. Tasted delicious, especially warm with walnut ice cream!

Amalgamation Cake I
Really good fruity cake. More work than I usually like to put in (I'm seriously into one-pot cookery!). Icing too sweet for me but made it look really impressive. Well liked by everyone who tasted it.
