Downeast Maine Pumpkin Bread

I entered this recipe in our local fair - it placed second, only because I decided to coat the raisins in flour so they would not sink - bad idea, because flour got into the folds of the raisins, which did not dissolve completely during baking, which I knew for judging purposes, would be an issue. Aside from that, I think it would have placed first. Very nice, large loaf. Thanks for the recipe!

Delicious Ham and Potato Soup

My 19 year old daughter asks me constantly when I am going to make this soup. I actually start by cooking the vegetables with a ham bone that has some meat still on it and then carry on with the remainder of the recipe. I think making the roux separately and stirring it into the stock sets this one aside from other soups.Thanks for a great winter recipe!

Banana Crumb Muffins

I really enjoyed these muffins. One of the few things that I make that my 19-year-old actually commented on! I entered them in our local fair this year and they won second place. One thing that I think would helpful, is for people to know that the recipe takes 1 1/2 cups of bananas. Three bananas, depending on whether they are small or large ones, could make a big difference in the outcome of the recipe. I added a tsp. of vanilla and 1/2 tsp. cinnamon. Thanks for a great staple recipe!

Perfect Turkey

This turkey was very tasty, I'm sure because of the brining. As someone else mentioned, however, I had a heck of a time turning it over, and mine was only 12 pounds. Next time I will cook it right-side up and baste it. I cut back the salt to 1 1/4 cups because of the size of the turkey. I am glad I did not use more because it would have been too salty. I also stuffed it with our favorite stuffing recipe. I cooked it for 4 hours at 350. Thank you!

Easiest Peanut Butter Fudge

I just brought this to a local fair for a baking contest. It turned out wonderfully smooth and does look just like what you would buy at a fudge shop. However, I did find it extremely sweet even though I did take the recommendations of cutting down both sugars. I found I could really taste the icing sugar in it. I will let you know how it did at the fair. Thanks for the recipe.

Peanut Butter Marshmallow Squares

I find the nuts "out of character" for this square. This is similar to the one I make. 1/4 cup butter melted in saucepan with 1/2 cup peanut butter. Stir in 1 cup butterscotch chips until melted. When cool enough so marshmallows don't melt, mix in 1 small bag of coloured marshmallows (227 gr.). Turn into greased 9"x9" pan. Cool and cut into 1" bars. Always the first thing to go at our bake sales! HINT: Sprinkle coloured marshmallows around bars when serving.

Coconut Macaroons

I have been trying to find the knock-off version of the "two-bite" macaroons found in the stores. I tried this recipe and added 1 tsp. of corn syrup (which is an ingredient listed on the back of the "two'bite macaroon" package. I made these for a bake sale and they all stuck (I used waxed paper). The flavour was so-so but not as intense as I would have liked, even though I added 1/2 tsp. almond extract. Still looking for the perfect recipe. p.s. Does anyone have a trick for not making this sort of recipe stick?

Bake Sale Lemon Bars

I used 1/2 the dough and put it in an 8x8 inch pan. It only took about 12 minutes to bake, which makes sense because it is similar to short bread dough. If you are trying to find a middle ground for the "lemony" taste, the amount of lemon in it is good. Some coconut in the crust would be nice. For Christmas, add some drained and cut up green and red cherries to the lemon mixture. Thanks for sharing the recipe.
