Zucchini Pasta II

I used butter instead of cream cheese, and added a defrosted box of artichoke hearts. Also added a splash of dry sherry. Before adding the chicken broth, I sprinkled the mix with Wondra flour (probably about 3 T.), to help it thicken. I used whole wheat penne pasta. My husband loved it.

Rice with Black Beans

This is very easy and very good. I drained the beans, used petite diced tomatoes, used Uncle Ben's ready rice whole grain blend, and sprinkled some chili powder and cumin on it. A big "thumbs up" from my husband.

Rhubarb Strawberry Crunch

This was extremely yummy. My rendition had a greater ratio of strawberries to rhubarb, and oats to flour, but that is a matter of taste. It held together very nicely and looked beautiful.

Peanut Butter Chicken Skewers

This has too much soy sauce for my taste. I recommend starting with 1 T., taste it and go from there. With less soy sauce and more ginger, it was very good.

Grilled Lemon Herb Pork Chops

I was too lazy to boil down the remaining marinade and baste while grilling, and it still tasted great from just the marinade. My husband really liked it, I'll make this again.

Fruit Dip V

With the recipe as stated, it was much too thick and I didn't like the taste/texture. I added milk to thin it to a reasonable "dip" consistency and it was good. I used peach yogurt with the vanilla pudding and that turned out well.

Cake Mixes from Scratch and Variations

I made the white cake version and was very pleased with it. I used butter instead of shortening, and 1/2 tsp each of vanilla and almond flavoring. I combined all the dry ingredients in the mixing bowl with a whisk, then added the other ingredients (including melted and cooled butter). Made 24 cupcakes, with tender texture and excellent flavor. I am very happy to have this recipe for reference.

Cream Cheese Mints

I made these for a baby shower and they were a huge hit. I had bought baby shower candy molds, and rolled the dough in granulated sugar before pressing into the mold, then popping them out to dry on parchment paper. To store, I cut squares of parchment paper that fit into a ziploc bag, and slid them into the ziploc bag. I made them a couple of days before the shower but they would have been fine for at least a couple of weeks (I know, I had made more than I needed and kept nibbling on them!).

Shredded Brussels Sprouts

We really loved this recipe as written. I later made a variation where I cooked down some sliced onions, then added the shredded sprouts, then some aspargus cut in pieces, and finally some halved cherry tomatoes.

Ham with Cherry Sauce

I used tart cherries for this - my husband loved it. I actually think I will use this recipe to make the filling the next time I make cherry pie. The sauce is quite sweet, but I think that goes well with ham. The recipe doesn't state if the can of cherries should be drained or not. I used the juice from the can and only had to add a little water to make 1 cup of liquid. This make a very thick sauce, similar to pie filling (hence my note above).

Banana Pancakes I

These were excellent banana pancakes! I also added 1/2 tsp vanilla. In addition to the 2 "mushed up" bananas, I diced up another one to add. I think it would be fun to dice up a few strawberries to add to this.

Barbequed Marinated Flank Steak

This marinade gave a very nice well-balanced flavor. We loved it. I used it on chunks of beef tenderloin that I skewered and baked for a few minutes at 450. They looked and tasted great.
