Ham N Egg Skillet

Excellent, and great for a quick dinner or easy breakfast. I second bandrs... the key to a nice crust on the potatoes is to LEAVE THEM ALONE! It seems like they are sticking, but once the crust forms, they will release easily. Also, don't stir them around too much, just a gentle toss to get all sides golden brown. Thanks for this recipe. It was great with some leftover canned ham, and really hit the spot with some hot sauce. Next time I would use four eggs instead of three, but otherwise, perfect.

Banana Banana Bread

Awesome recipe. I have always used the BHG banana bread recipe but had problems with it coming out dry. This bread was dense, tasty, moist and delicious.

Lentils And Spinach

Really easy and really delicious. This recipe handles throw-ins really easily, so it is great when you have various odds and ends in the fridge when you want to use up. I added in some leftover homemade marinara, a bit of canned corn, and some fresh zucchini and carrots. Delicious served over rice.

Black Bean and Salsa Soup

Super simple, and delicious in about fifteen minutes. The flavors are WAY more complex than anything else you think you could get in this amount of time. A great idea using standard pantry items!

E-Z Chicken Tortilla Bake

Actually a pretty decent recipe, and so easy I don't care if it's not gourmet. I've also made this successfully with leftover cooked rice instead of the tortillas, which makes this a great follow-up to a roasted chicken, rice and veggie dinner. Also lends itself to throwing in diced fresh veggies to add some nutrition. My husband called it "grubbin'".

Lobster Tails Steamed in Beer

Nice recipe, very simple. I made it twice with two kinds of beer, and found the Red Stripe version to be very tasty. One note: the recipe doesn't specify a size of lobster tail. I had to steam my lobster tails quite a bit longer than the recipe states in order to ensure they were cooked.

Coconut Curry Tofu

Very tasty. Freezing the firm tofu before using it is key to the texture of the tofu in this one. I halved the amount of curry paste as that stuff can be volcanic (especially the red stuff) so be careful if you don't like spicy food. Otherwise a quick, delicious meal.

Aunt Teresa's Chicken

No offense to Aunt Teresa, but this recipe is terrible. I thought it looked like it would be rather bland, and surprise! It was. I guess I was hoping the sum would be greater than the parts in terms of flavor, but I was wrong. It basically tasted like canned cream of mushroom soup. Which is great, if you like that sort of thing. Perhaps the recipe could be salvaged with an enormous amount of tweaking, but then it wouldn't be this recipe, now would it? As is, two stars. There have to be other easy chicken recipes worth trying. Stay away from this one unless you are willing to do the experimentation to make it work.

Vietnamese Beef And Lettuce Curry

I don't know how Vietnamese this really is, but it was tasty nonetheless. Would add some vegetables next time around. But with the fish sauce, a Thai sweet chili sauce, and some Sriracha (for punch), this was quite good.

Refried Bean Enchiladas

I made the recipe as is, and these were very bland and mushy. The sauce was lacking in depth. They were halfway decent the night I made them, but as leftovers were awful. Perhaps with major adjustments as outlined by other reviewers this recipe can be salvaged, but as written I would skip it and try a different enchilada recipe.

Chicken Thigh Fricassee with Mushrooms and Rosemary

The chicken was very tender... fall off the bone tender! The sauce was good, but could have used a little more "punch"... I agree it could be spiced a little better to balance out how rich it is. I would make this recipe again, with changes.

Thai Curry Tofu

Very tasty and mild, a good "beginner" curry. I added in a head of cauliflower florets (blanched for 5 minutes) when adding the tofu to the sauce. Good flavor and not too complicated.

Pot Roast in Foil

Ultimate comfort food, American style. So incredibly easy, and very tasty. I used a 3lb eye of round cut and it was delicious. I had plenty of gravy just following the recipe as written, but there were only two of us.

Herbed Mushrooms with White Wine

Very tasty. Brown or crimini mushrooms are great for this recipe as they won't release as much water as white mushrooms. Also make sure to use a drinkable wine for this recipe as the wine is an important flavor. Great for a variety of fresh mushrooms, but I have used this with success even on mushrooms that are a little "past their prime." Thanks!

Great Garlic Bread

Great with fresh minced garlic and parmesan. I added a light sprinkle of cayenne for a little kick. Next time I would also add a little minced parsley and some salt, as the bread was "almost there" but not quite...

Bacon Chicken II

Like all simple recipes this one requires some pretty quality ingredients to make it worthwhile. This would be great with a homemade bbq sauce, but I was satisfied with KC Masterpiece Hickory BBQ, which I had picked up because it was rated highly in the Cooks Illustrated taste tests. A poor bbq sauce would make this recipes inedible, I am sure. I used a thick cut, smoky bacon, and actually discarded it after cooking, so I can't speak to its consistency. It added a good flavor to the sauce. I also added in some red onion (ringed) and some garlic powder before I poured over the sauce. I used a whole bottle for four hefty sized chicken breasts (along with their tenders). This was a simple approach to BBQ chicken which I wouldn't have thought of. It was tasty with some Southern-style mustard greens and rice.

Best London Broil Ever!

Very easy, but you get out of this recipe about what you put into it. I rubbed the meat with salt and pepper, and added garlic powder, onion, oregano and basil to the tomatoes, but still the meat was bland. Tender, yes, but bland as all get out. This recipe has a good technique for cooking the london broil, but in terms of flavor, it needs alot of help.

Quick Creamy Potato Soup

Very good recipe, and quick to prepare, as promised. As per other reviewers, I added celery and carrot to the onions. I added salt, pepper, dill and celery seed to the sauteeing vegetables, and adjusted seasoning again after adding the soup and milk. I also stirred in some sharp cheddar cheese. It was very flavorful, even using Cream of Mushroom soup, but as I mentioned I did add plenty of spices and herbs. Served with shredded sharp cheddar, a dollop of plain yogurt and some green onions. My husband had seconds, even though he was full. It was that good.
