Tomato Zucchini Casserole

Made this as written and took it to a cook-out today. It was a big hit with the women. The men....not so much... except for my son-in-law. He loved it! I think next time I'll add more fresh bread crumbs and onion and maybe a little less butter. I think some shredded Swiss might be yummy. Will definitely make it again.

Sweet Restaurant Slaw

Delicious!!! Made it for a family gathering and it was a hit. I did cut back on the sugar to 1/3 cup then added another teaspoon later. So, so easy!

Chicken Florentine Casserole

This is an excellent basic recipe and even better the next day. Sorry, but I did adjust some things to suite my personal taste. Next time I'll use about 1/2 the amount of Parmesan (too salty) and cut the Mozzarella a bit, maybe use a little less butter and add some wine. (Meant to add it anyway but forgot). I used FF cream, frozen spinach (should have used fresh), and left over roasted chicken. I don't care for Italian Seasoning but if I had used it, I would cut it back to 1 tsp. at the most. Used about 1/2 tsp. each Thyme and Basil. I may try some Rosemary too. Thank you for a great new recipe. I will make it many times.

World's Best Lasagna

Excellent lasagna! Made if for family on Christmas eve and everyone loved it. Lots of compliments. I did add a little extra shredded Italian cheeses but it didn't change the fact that the sauce etc., was delicious.

Reuben Sandwich II

I love Reubens and this sounds like a pretty good one but I feel this needs more corned beef (one or two more slices per sandwich), plus I mix the Thousand Island dressing with the sauerkraut. That sweetens up the sauerkraut a bit so you don't get that sour taste with every bite. If eating out, I usually order a small side of Thousand Island dressing.

Italian Sausage, Peppers, and Onions

I have made these several times and they are delicious. A friend dropped by one night after dinner and stood over the plate and kept picking and picking until she ate at least a whole sausage and several pieces of peppers. I decided that I personally prefer a combo of butter and EVOO to saute' and Thyme instead of Oregano.
