Stephan's Broiled Salmon Pesto

If I could give this recipe more stars I would! I LOVE this recipe! This is so easy and so impressive for company! I have made this for almost every guest I have over and also for 2 very elegant dinner parties I have had. I serve the salmon with a rice pilaf and some grilled vegetables. From start to finish this dinner takes me just 20 minutes! Every time I make it someone asks for the recipe! And to comment on the comment above me by LeeLee222 - the pesto is better when blackened. The flavor of the blackened pesto is to die for! When I serve it I generally tell people the pesto is suppose to be blackened. I also choose to make my own pesto because I can make it thicker and less runny than the bottled stuff.

Spinach Mushroom Quiche

My first quiche ever and it was delicious! I heeded others warnings about the soup mix. I was making 3 quiches for a brunch and I used 1 Knorr's Vegetable Soup Mix (couldn't find the other) for all 3. I also had frozen spinach - I used 1 bag for all 3 (hard to know how much to use becuase the fresh would cook down so much). And I think the best change I made was that added some bacon. I cooked the onions and mushrooms in a bit of the bacon greese instead of the butter. One problem I had was that the middle didn't cook up completely and the crust was getting too dark to continue cooking. Did anyone else have this problem? I had some runny egg in the middle. I didn't mind though becuase it was soooo yummy! I will definitely make this one again!

Maple Glazed Ribs

We loved these! The only change I made is that I added about 1/2 tsp of crushed garlic to the marinade. I did double the sauce because I love a lot of sauce, but what I had left after marinading never got used because the ribs were perfect with just the glaze. Oh, and I only had 1 hour to marinade because I started too late, but I don't think it made a difference.

Baked Slow Cooker Chicken

It was moist, but flavorless. I even seasoned it with many more flavors than it called for. I would prefer it on the rotisserie. The only great thing that came from this was the broth it made. I will use that in something.

Calico Bean Casserole

Very good. I drained all the beans except the pork and beans. I also used more sugar (I've got a sweet tooth) and more onion. I've had a similar recipe where the person also used lima beans... I might try adding that. Next time I will also cook the bacon separately like another chef recommended. I don't like soggy bacon. With these changes it is a 5-star recipe.

Spinach Stuffed Chicken Breasts

Sooooo Yummy! I just found this recipe last week and have made it 2 times. My husband loves it! I made a few adjustments. Instead of wrapping the chicken in bacon, I cooked the bacon and crumbled it and put it in the spinach mixture. I also added sun-dried tomatoes and chopped toasted pinenuts (the pinenuts made the dish AMAZING). And I seasoned the outside of the chicken with an italian parmesian seasoning. I also like to cook my chicken faster which makes it more moist, so I cooked it at 400 for 30mion. I plan to make this at my next dinner party. And I NEVER make chicken at dinner parties because it is usually too boring... but not this time!!!------------------------------------------------- *It is now a week after writing this review and I plan to cook it again tonight!!!*--------------------------------------------------------- OMG - I added toasted pinenuts and got rid of the green onions I had added before and it made it PERFECT!!! I made it for a friend who had just had surgery and they both loved it too!

Avocado Salsa

Sooo great after I added more salt. I also have made this with some tobasco to kick it up a notch. Sometimes I will also add some lime juice if I have it. Everytime I've made the crowds go wild!

Really Creamy Fettuccine Alfredo

Very good. I think the idea of cutting the cream cheese would be good because it is VERY thick the way it is. I used the sauce as a sauce on a "white pizza" with the original recipe and it was great because it was so thick. But with the pasta it is too thick... I had to add much more milk to thin it out and make it saucy.

Chicken Cordon Bleu II

WOW! This was much easier than I thought, and definitely delicious! The sauce is spectacular! I added sliced mushrooms to the sauce and about a half a teaspoon salt. The salt definitely brought out the taste. And the mushrooms I do to anything that they won't clash with! I love mushrooms! I licked my plate clean!

This is also so spectacular with banana's sliced into it! I got the same recipe (but lost it... so happy to find it here) from my sister in law. The recipe she gave me included banana's. Give it a try!

Ahi Poke Basic

YUMMY! I use to get this at a sushi bar, and now I can make it at home! It's delicious! Try it over sticky rice! I took out the macadamia nuts (which I really don't care for) but I added cucumber and boiled octopus and it is exactly the way they serve it at my favorite sushi bar!

Cajun Chicken Pasta

My husband and I went crazy over this, after I added sun-dried tomatoes! It could be a little more spicy for it's namesake, but otherwise it was perfect! I would definitely recommend the sun-dried tomatoes though!
