This recipe makes nice flavorful beans. My famlily recipes are very similar to this one. I add a little more sofito and some chopped alcaparrado. Alcaparrado is a mixture of green olives stuffed with pimentos and capers. My family puts green olives in everthing! This is such a classic dish, it goes with everything. My husband and I put some in a bowl, place a fried egg on top and dip plantian pieces in it for breakfast and dinner a couple times a week!

¡Qué Rico! I LOVE these sandwiches. They make you happy when you make them and eat them...at least they do in our house. I always made mine with chicken, but the skirt steak is excellente!

Golden Rum Cake

This is a great cake! I suggest using Bacardi dark rum (por supuesto!)In fact-Bacardi put out a recipe similiar to this. I garnished mine with marachino cherries....Do not be afraid to use all the rum! I poked holes in the cake so that the rum would absorb.

Almond Bars

Excellent! I can not tell a lie...I did not make these-but my friend brought these to our cookie exchange and we are both avid Allrecipe users. She told me this was the recipe to her lovely cookie bar. Wonderful. All I can say. More like a dense piece of cake than a cookie- just wonderful. My husband scarffed many down....he is one of "those" who can eat and eat and not gain a pound!

Morelos Salsa Verde

¡Qué Rico! I had a "cambio de galletas" (cookie exchange) this weekend and made a batch of this as a mojo to have with some chilaquiles. Lovely flavor! I have a lot left over and I am putting it on everything...my vegetables, my meats, etc. Thank you!

Excellent! Came out perfect! This is the real deal! My local latin market was out of ajies dulces-so I used red peppers instead. Made the difference with my habiculeas rojas!!

Delicious Raspberry Oatmeal Cookie Bars

I made these for a back to school night at my daughters high school. They were a hit. I did not have raspberry jelly on hand. I bought strawberry jelly by accident. Still wonderful! I have also used Guava paste and guava jelly-to give a little Carribean flavor! Better than the strawberry to me!!

Puerto Rican Pork Roast

Què Rico! I made this for Sunday dinner and it was wonderful. I did not use pernil-I used a 2 pound pork loin roast because it was just my husband and I! I used all the ingredients for the rub except I scaled them down a bit: 4 cloves garlic, 3 teaspoons salt, 3 teaspoons pepper, 2 teaspoons oregano, 1-2 tablespoons olive oil and I used the advice of Latinacook and added 1 tablespoon of white vinegar. Delicioso! I served it with rice and some calabaza-it is fall after all! Great recipe Kenny! Gracias!

Award Winning Soft Chocolate Chip Cookies

These were good. I am a chewy cookie kind of person. I made them for a party and made them really tiny. Everyone loved them. I used dried cranberries instead of nuts. Also-I made the dough 1 week ahead and rolled into a tube and froze it so I could slice and bake the morning of the party.

Deep Dish Brownies

Holy Cow! I was uncertain about this but they came out great! I followed the advice of the others and only used 2 eggs. I also (to add insult to injury)added 2 cups of chocolate chips to this. I had to chill them and then cut them into bite size pieces. They were part of my desert buffet for my Welcome Fall party over the weekend. Yummy. Very rich. Some people were laughing about how Obnoxiously chocolately they were!

Andrea's Pasta Fagioli

This soup was easy to make and delicious. My husband caught a cold and I whipped this up in no time. Very easy to transport to work in a storage container. I took the advice of others and used 1/2 pound pasta. A keeper!
