Salmon with Creamy Dill Sauce

Reviewed: Feb. 3, 2009
This was very good. My salmon filet was still a little frozen when I through it in the oven so it had to cook a little bit longer than the recipe said. Overall, the flavors were wonderful and the sauce was a nice match.

Shrimp and Crab Enchiladas

Reviewed: Feb. 15, 2009
These were very good. My husband suggested next time trying them with chicken instead of shrimp and crab. I made a couple small changes. I added about 3 tablespoons of sour cream and a small can of diced green chilies and mixed them together with the cheese, shrimp, and crab prior to putting it into the tortilla. Otherwise everything else was the same.

Fettuccini with Mushroom, Ham and Rose Sauce

Reviewed: Feb. 22, 2009
excellent recipe. Leftovers even warm up well the next day. It seemed like the flavor got stronger sitting in the fridge overnight.

Garden Pasta Salad

Reviewed: Sep. 9, 2009
great salad. Didn't have the canned tomatoes so added fresh along with extra (a lot extra) of the dried spices and fresh garlic that are added into the canned tomatoes. My husband suggested maybe adding some mango to it. I plan on trying that the next time I make this salad.

Dominican Style Oatmeal

Reviewed: Sep. 27, 2010
My kids love this oatmeal and even my picky husband will eat it without complaining. Sometimes add raisins, but it isn't necessary.

Maple-Garlic Marinated Pork Tenderloin

Reviewed: Oct. 4, 2010
This marinade is great. I added a little bit of soy sauce to the marinade in the cooking step because we aren't big into really sweet sauces and wanted the extra to go over the meat. If you don't mind sweet sauces it is excellent as written.

Spinach Quiche

Reviewed: Nov. 16, 2012
This was excellent! I used 4 large eggs and two regular 9" pie crusts that I pre-baked for 7 minutes before adding the filling.

Pineapple Chicken Tenders

Reviewed: Oct. 14, 2010
These were excellent. Marinated for 12 hrs, then grilled with pineapple. Took the marinade and boiled it for a few minutes and added a tbs of soy sauce to tone down the sweetness a bit. Then I thickened it up with a bit of cornstarch. Will definitely make again.

Pesto Cream Sauce

Reviewed: Oct. 19, 2010
excellent recipe. I mixed the flour with the onions and garlic before adding the milk. I added Parmesan instead of Romano because that is what I had available. I also used a can of mushroom pieces and a can of diced tomatoes (drained) and a bit extra pesto. It turned out great. I'm sure with fresh veges and Romano cheese it would be great also. Will definitely make again.

Terrific Turkey Chili

Reviewed: May 15, 2011
I thought this was very good chili. It's wasn't as spicy as I usually make but it had very good flavor and I didn't have to fight with the kids to eat their food. I added a can of garbanzo and black beans. I'd probably replace the garbanzo beans with kidney or pinto beans next time.

German Apple Cake I

Reviewed: Oct. 29, 2011
This was a very excellent cake. I decreased the amount of sugar to about 1 1/2 cups because that is all I had and it was plenty sweet. I did all the mixing by hand because I don't own a mixer and it turned out a little less dense than it would have if I had used a mixer. Still a great cake and a great recipe for using up our apples.

Mac and Cheese Henwood Style

This was great! I adjusted the cheese amounts to fit my liking, but the blue cheese added a nice tang to the normal mac and cheese that the whole family enjoyed.

Chicken Breasts in Caper Cream Sauce

Reviewed: Feb. 1, 2012
This was great! I did add a splash of white wine to the pan to deglaze before adding the cream but that's the only change. I'll definitely be making this recipe again.

Pesto Chicken Penne Casserole

Reviewed: Feb. 9, 2012
This was very good. I was in a hurry so I just decreased the amount of milk and skipped the baking part. I topped it with Parmesan w/o the bread crumbs.

Pork and Shrimp Pancit

Reviewed: Oct. 15, 2012
I thought this recipe was great! I made it with some leftover shredded pork loin that I had made earlier in the week in the crock pot. The pork kind of reminded us of tuna and with the seasonings and sauce from this recipe it worked very well. I'll definitely make this again when I have leftover pork to use up.
