Yellow Rice with Meat

Reviewed: Oct. 8, 2010
This is pretty good but I think a different sauce is needed. Chili sauce is ok but my husband thought that maybe a green sauce would actually be better. Will probably try again with changes.

Maple-Garlic Marinated Pork Tenderloin

Reviewed: Oct. 4, 2010
This marinade is great. I added a little bit of soy sauce to the marinade in the cooking step because we aren't big into really sweet sauces and wanted the extra to go over the meat. If you don't mind sweet sauces it is excellent as written.

Grilled Fish Tacos with Chipotle-Lime Dressing

Reviewed: Oct. 4, 2010
These were pretty good but the dressing was a bit strong. Once we added more fresh lime juice it was balanced nicely.

Dominican Style Oatmeal

Reviewed: Sep. 27, 2010
My kids love this oatmeal and even my picky husband will eat it without complaining. Sometimes add raisins, but it isn't necessary.

Aussie Chicken

Reviewed: Sep. 25, 2010
heart attack in the making, but very good. I marinated my chicken in worchestershire, lemon juice, and garlic. I cooked the bacon, drained it and then added the mushroom and sauted them with the bacon for a few minutes. I omitted the corn syrup to make it a little healthier and used stone ground brown mustard instead of yellow. It's an excellent recipe and although I made changes to it, I feel that the base recipe is worth a 4 star rating also, losing a star only to the fact that this recipe will kill you if you eat it every day.

Balsamic Baked Tilapia

Reviewed: Sep. 22, 2010
Although this is an excellent base recipe I thought it would be a bit bland so I changed it a little. I added a TBS of garlic to the veges. I also seasoned the fish w/ Old Bay instead of salt and pepper and broiled one side for 5 mins on low then flipped them and added the veges and blue cheese and broiled them another 4 mins until cheese was melted and fish flaked. Then I served on rice with a side salad. 5 stars with the changes but 4 as it is written.

Scampi-Style Scallops Over Linguine

Reviewed: Feb. 15, 2010
I thought it was really good. I added a little extra onion and garlic and sauted them together w/ the anchovies. I also added a little extra wine and thickened the sauce with cornstarch. My husband suggested adding a diced fresh tomato next time around. Excellent base seafood recipe. Will make again.

Garden Pasta Salad

Reviewed: Sep. 9, 2009
great salad. Didn't have the canned tomatoes so added fresh along with extra (a lot extra) of the dried spices and fresh garlic that are added into the canned tomatoes. My husband suggested maybe adding some mango to it. I plan on trying that the next time I make this salad.

This was an ok recipe for tilapia. I prefer some other recipes though and probably won't make this one again.

Tender 'n' Tangy Ribs

Reviewed: Mar. 17, 2009
these were good ribs however the sauce was really runny. I thickened it up with some cold water and cornstarch in a separate saucepan.

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 17, 2009
It turned out very good but I think I added a 1/2 cup extra flour. (got distracted by kids and other food I was making). Mine turned out to be more like a giant biscuit but the flavor was great.

Creamy Apple Crumb Pie

Reviewed: Mar. 17, 2009
This was just an ok apple pie recipe. I didn't think there was anything really special about it though. Maybe adding some caramel ice cream topping over the top would give it a little more zing.

Colcannon

This was an ok recipe. It was pretty bland though. I added some sour cream to supplement the flavor. It was really good with the corned beef roast.

Chicken Costa Brava

Reviewed: Mar. 16, 2009
I thought it was excellent and my 2 and 5yr old's ate it pretty well (probably because of the pineapple). My husband said maybe add a dash of oyster sauce but otherwise it was good.

Steak and Rice

Reviewed: Feb. 22, 2009
really good recipe but next time I'd probably use a more tender cut of beef or pound it down a bit to let the flavors soak into the meat more. I will make this again.

Fettuccini with Mushroom, Ham and Rose Sauce

excellent recipe. Leftovers even warm up well the next day. It seemed like the flavor got stronger sitting in the fridge overnight.

Peking Pork Chops

Reviewed: Feb. 22, 2009
even with low sodium soy sauce it was too salty for my tastes. Next time I'd use half soy sauce and half teriyaki sauce.

Shrimp and Crab Enchiladas

Reviewed: Feb. 15, 2009
These were very good. My husband suggested next time trying them with chicken instead of shrimp and crab. I made a couple small changes. I added about 3 tablespoons of sour cream and a small can of diced green chilies and mixed them together with the cheese, shrimp, and crab prior to putting it into the tortilla. Otherwise everything else was the same.
