German Apple Cake I

This was a very excellent cake. I decreased the amount of sugar to about 1 1/2 cups because that is all I had and it was plenty sweet. I did all the mixing by hand because I don't own a mixer and it turned out a little less dense than it would have if I had used a mixer. Still a great cake and a great recipe for using up our apples.

Mushroom Lentil Barley Stew

This was great but a little on the salty side for me. I used poultry seasoning instead of sage and added carrots, jalapeno, fresh onion, and garlic and sauteed them in some olive oil before adding to the crockpot. My dried shiitake mushrooms were still a bit tough but added great flavor. Next time I might just add another cup of button mushrooms to save some money. Overall it's a great recipe and I'll definitely make again.

Terrific Turkey Chili

I thought this was very good chili. It's wasn't as spicy as I usually make but it had very good flavor and I didn't have to fight with the kids to eat their food. I added a can of garbanzo and black beans. I'd probably replace the garbanzo beans with kidney or pinto beans next time.

Tilapia Scaloppine

This was really good. After sitting a while the flavors get a bit strong so if you have any leftovers you should store the fish separate from the sauce. Had lots of leftover sauce so serving with pasta or rice is necessary if you want to use up all the sauce. Served with garlic cheese bread and a broccoli cauliflower mix. Will definitely make again! A very nice alternative to the cheese and butter coated fish.

Tasty Italian Chicken

I can't give it a 5 star because I had to modify it to get the flavors right. My modifications: 1Tbsp ground black pepper to the sauce, 3/4 c. white wine and 1/2 c water, then simmered for 15 mins. The chicken I cut in bite size pieces, coated in the flour mix, and then browned quickly in olive oil to lock in moisture. Then I added the sauce and let cook on med-low for 10-15 mins. I then served with rice and a green salad.

Beefy Baked Ziti

very good with a few changes. First I used sausage instead of ground beef. Beef tends to be a bit bland for my tastes. Then I sauted garlic, basil, oregano, rosemary, and a dash of cayenne pepper with the onion. Otherwise kept it the same. My 4 star rating is without the changes, 5 stars with them. Very cheesy and flavorful that the whole family enjoyed. Thanks for the basic recipe Colleen!

Cream of Spinach Soup

As written it was too bland. However after making it using the tips from KOliveras comment it was excellent. Will definitely make again! Thanks for the base recipe. It was a good way to get rid of some frozen spinach in the freezer.

Slow Cooker Chicken Stroganoff

this turned out excellent! My kids loved it and it was so easy to make. I through in frozen breasts and after 5 hours cut them up into bite sized pieces before I added the soup and cream cheese.

Chicken Milano

This is a good recipe. We're moving so I was looking to use up some things in the cupboard. I added extra sun dried tomatoes (not the kind packed in oil) and used 2/3 cup milk, 1/3 cup chardonnay, and cornstarch instead of heavy cream to make a bit healthier. I also sliced up the chicken and rolled into some seasoned flour (salt, pepper, paprika) before browning it. I thought something was missing but it might be just the fact that the extra sun dried tomatoes were a bit overpowering. Next time I'll make with only the 1/2 cup called for in the recipe.

3-Cheese Mostaccioli Bolognese

a great starting recipe. I figured on it being a bit bland from the reviews so I added some basil, oregano, black pepper, a dash of cayenne pepper, and 2 more cloves garlic. Used a lb of hot Italian sausage instead of ground beef. It turned out excellent. The cheeses really balanced the spices very well. My husband actually said I could have added more cayenne pepper (he likes spicy food). I thought it was great as is and mild enough for our kids to eat it without a struggle.

Orange-Cucumber Lettuce Salad

it's good. My daughter (4) ate all of it and drank the little bit of dressing out of the bowl and then asked for more. A great recipe when I don't have to fight with my kids to eat their salad. The adults thought it was good but nothing spectacular. It was a good recipe to use up some cucumbers and oranges that were getting old in the fridge.

Pesto Cream Sauce

excellent recipe. I mixed the flour with the onions and garlic before adding the milk. I added Parmesan instead of Romano because that is what I had available. I also used a can of mushroom pieces and a can of diced tomatoes (drained) and a bit extra pesto. It turned out great. I'm sure with fresh veges and Romano cheese it would be great also. Will definitely make again.

Pineapple Chicken Tenders

These were excellent. Marinated for 12 hrs, then grilled with pineapple. Took the marinade and boiled it for a few minutes and added a tbs of soy sauce to tone down the sweetness a bit. Then I thickened it up with a bit of cornstarch. Will definitely make again.

Roast Pork with Apple and Onion Gravy Adjusted by Joy

This recipe was excellent! We all loved this gravy. I added a little pepper and garlic to the gravy for some added seasoning. Will definitely make again. Served with corn, mashed potatoes, and fresh french bread.

Tangy Apple Chicken Loaf

I made this with turkey instead of chicken and thought that it was really good. Accidentally added too much sage so it had a strong sage flavor. I thought it tasted like turkey and stuffing and I enjoyed it. The rest of my family would have had regular meatloaf instead.
