Cheesy Sausage Zucchini Casserole

I added a lot of extra spices to this recipe, but as a base recipe it was good. I sauteed fresh mushrooms, onions, & garlic in some olive oil for 5 minutes and then added the zucchini and seasonings (italian seasoning, cayenne pepper, black pepper, and some basil). Then I added the sausage (already cooked, leftover from biscuits & gravy), cheese, a drained can of italian stewed tomatoes and rice. I should have doubled my rice because my mixture turned out a bit soupy so I just served it in a bowl with flatbread. I made it all in one pot and didn't bake it because we were short on time.

Creamy Pesto Shrimp

This was a great recipe. I did saute some mushrooms, onions & garlic to the sauce. My cream did curdle a bit because I forgot to remove it from the heat when I added the parmesan. After it was done I threw in some tomatoes that were getting a little over ripe in my fridge. It was a nice addition with the pesto cream sauce.

Chad's Slow Cooker Taco Soup

This was a really good chili. I did add a little chipotle chili powder and a dash of chyenne pepper also and substituted a can of low sodium diced tomatoes and two small cans of tomato sauce for the crushed tomatoes (because I didn't have any). I think it might have been a little on the mild side for us if I didn't add the extra spices. My husband said it could have used more but my daughter (who is not that into spicy things yet) said that it was still a little too spicy but still ate it.

Baked Ziti I

This wasn't bad it just was a bit too cheesy for my liking and the noodles didn't have very much of the sauce flavor to them. Next time I'd use a different cheese than provolone or try to find shredded provolone so I can evenly distribute it and adjust the amount a bit. The slices of provolone were just a bit too think (especially where the slices overlapped). I'll also mix the pasta with some of the sauce before putting it in the pan so the pasta has an even coating of sauce to soak up the flavor. I might also try half ground beef and half sausage to also add more flavor to the recipe. Overall it wasn't bad it just needs a few tweaks to meet my expectations.

Quinoa and Black Beans

This is a really good recipe. I did add more of the spices this time since the first time I made it I thought it was a bit bland. Fresh cilantro is the key to this recipe so if you don't have any on hand I would hold off until you can take a trip to the grocery store.

Pork and Shrimp Pancit

I thought this recipe was great! I made it with some leftover shredded pork loin that I had made earlier in the week in the crock pot. The pork kind of reminded us of tuna and with the seasonings and sauce from this recipe it worked very well. I'll definitely make this again when I have leftover pork to use up.

One Pot Pasta

I first made it as written, and I agree with other reviewers it was pretty bland. I made this again with fresh tomatoes, herbs, garlic, and added some zucchini from the garden and it was wonderful. This time I also added a pound of hot italian ground sausage for my meat loving husband but I'm sure with the fresh veges & herbs it would have been excellent without.

This was very good. I did add some sliced hot Italian sausage and I used Cheyenne pepper instead of the red pepper flakes but those are the only changes I made to the recipe. I will definitely be making this again for a quick dinner idea.

Honey Mustard Grilled Chicken

This was very good. I sliced the chicken breasts into strips and it worked out great. I think it wouldn't have been enough flavor throughout if I had just dipped the breast and cooked it whole.

Pepperoni Caesar Pasta Salad

turned out really good. I used Parmesan instead of mozzarella and added some halved grape tomatoes. Next time I'd use both Parmesan and mozzarella. It is necessary to make this at least a day in advance so the flavors can meld together.

Pesto Pasta with Green Beans and Potatoes

This was a good recipe. I did make a few changes. Like others I used sour cream instead of yogurt, because I couldn't find a small container of plain yogurt and I wasn't going to buy a big tub just for this recipe. I then added diced yellow onion and a half of red bell pepper to the veggie mix because they were in my fridge and needed to be used up. My husband wanted me to add some turkey kielbasa for next time but as is it was a good recipe.

Baked Orange Roughy with Veggies

I made a few small modifications based off of some of the reviews saying it was a bit bland. Along with the lemon pepper seasoning I added a dash of Cajun seasoning and then I also added thyme and minced garlic to the veggie mix. Added some shredded parmesan cheese instead of the grated and omitted the butter all together.
