Grilled Fish Tacos with Chipotle-Lime Dressing

Thanks mabcat, this was delicious! I made it with halved sea scallops and shrimp, and it was wonderful! Only had time to marinate 1 hour, still had a ton of flavor. On the adobo sauce, I did use sauce from a can of chiles in adobo, but of course I didn't use anywhere near 1/2 cup. I added a teaspoon at a time, probably used about 4 tsp. Had a nice kick but not so fiery as to mask the seafood. Also, added a little queso fresco I had in the fridge as a final touch. Delicious!

Whole Grain Waffles

Terrific recipe - we love these waffles, and they are good for you too! I made the recipe as written with the single exception of soy milk for milk. My waffle maker has a nonstick surface, so we saved on fat and calories there as well. We've eaten these with yogurt and fruit on top, blueberry syrup, and maple syrup; all 3 toppings were delicious with the waffles. Thanks for posting!

Tartar Sauce II

Thanks for this recipe! I was in a hurry so I left out the egg - intrigued by that, will have to try it with the egg next time. I also added a tablespoon or two of lemon juice, some dill and parsley. My favorite calorie reducer is to use 1/2 mayo & 1/2 nonfat yogurt. Gives it a tang and loses some fat. Had to chop a few pickles (out of relish) but that seemed fine.

Whole Grain Healthy Banana Bread

I ended up using the substitutions from angiehdavis as i was short on bananas and am not a big Splenda fan. These turned out to be very moist, had to cook them quite a while, maybe 35 minutes for 4 small loaf pans. Next time i will use all bananas for more banana flavor. SO loved this version though! I liked the addition of oats and walnuts.

Seasoned Broccoli Spears

I had to give this 3 stars because we did not like the taste of thyme with broccoli. Having said that, I thought this was a great idea and next time I will modify it to our taste.

Asian Mushroom Soup

Thank you - very nice recipe. I left out the noodles for a low carb eater, left out the chicken because we had meat in a main dish. Still very good. I used rice wine vinegar in place of mirin, about 2 T. Also sauteed the cabbage a little, added mushrooms and lightly sauteed those too. Followed the recipe after that. Delicious and filling. I can see ways to adapt this for different meals and ingredients.

Chicken Marsala

Nice recipe. I made it using suggestions from Mrs K and bhappe. I was out of chicken stock and would have made a larger volume of the sauce otherwise. Used lots of mushrooms and also added a diced shallot and large clove of garlic to extra mushrooms. Not sure if the extra herbs i added to the flour made much difference. All in all, a nice dinner- served with angel hair pasta, roasted asparagus and a salad, parmesan on the table for those who wanted it. It was a nice week night meal for company.

Watermelon and Strawberry Lemonade

Delicious! Agree with previous reviewers that less sugar is needed. Still, this was so refreshing and the color of the lemonade is beautiful. i will also add a little more lemon juice next time for more citrus kick.

Dijon Garlic Salmon

Thanks for this quick and tasty recipe! I didn't want to heat up the house thus: used 2 pans, sauteed the onions & garlic together with salt & pepper in one, seared the skin side of the salmon (with flesh side coated in mustard/salt/pepper) in another oven proof one. Broiled the salmon to finish, topped with fresh tarragon from my garden. Wow,now that was good! Once again, thanks for this easy and yummy recipe :)

Creamy Chocolate Frosting

This was an easy recipe to put together, which was one of the best aspects of it. The flavor was a little too sweet for me, so I added more cocoa to tone it down a little. I think the cocoa made it somewhat gritty, though it was somehow still creamy. I think that next time I might dissolve the cocoa in a little bit of hot water. Hopefully it won't be too runny since I will be using extra cocoa to decrease the sweetness.

Blueberry Sauce

I loved it, my husband was only so-so about it. As mentioned by others, the flavor does develop more after a day in the fridge. I used 1/3 c. sugar and 1/3 c Splenda, and it was plenty sweet for me. Good alternative to sugary syrups!

Broccoli Cornbread

Sorry- we just didn't like it. The texture was too far off from that of traditional cornbread for our taste. I will try to tweak it though, so thanks for the idea.
