Carne Asada Tacos or Al Pastor Tacos

This was yum. Cut Carne Asada into small chunks before marinating for 2 hrs. Omitted soy sauce, thyme and cloves. Added a dash of nutmeg and a 1/2 tsp chili pepper. Used juice of a lemon instead of the vinegar and used a tsp powdered onion and garlic. Stirred it up in bowl and tossed the chunks through. Sautéed on the stove adding a little water for sauce. Perfection on flour tortillas with cilantro, grated cabbage with a squeeze of lime and fresh tomatoes.

Monkey Bread I

This was such a great result for the brunch I made for Mothers Day. Everyone loved it. I added a pinch of salt and a teaspoon of vanilla to the stovetop Carmel mixture and baked 10 min longer. Turned out perfect. Really Delicious.

Fluffy Pancakes

These are the best pancakes I've ever had. My family and friends always rave about them. 15 of us rented a lake house for the 4th. They gobbled them up. Only thing I do different is use oil instead of butter in batter. It makes them fluffy. And I let the mixed batter sit on counter for a few minutes till I can see bubbles forming on the surface, then thin the batter with a little water till pouring consistency. They are still plenty fluffy. Yummmm!

Pimiento Potato Salad

This is the most delicious potato salad I have made in a while. I usually double and triple it. My family are allergic to the eggs in mayonnaise so I always substitute my eggless mayonnaise in the sauce but otherwise I make as it as written. I have to admit to doubling the bacon sometimes as my mom likes it that way. Try this salad, you will be happy to put it into your recipe box.

Easy Pizza Sauce III

This is my favorite pizza sauce. Instead of the oregano and paprika, I often grind a tablespoon of italian seasoning blend into the tomotoe paste and sauce, then add my garlic. The spice blends/grinders have alot of different spices including a red pepper flake that adds a nice zing. Such a simple and tasty sauce!

Refrigerator Rolls

Really easy and versitile roll recipe. I took this recipe and once they were doubled in size, cut into quarters. Rolled the quarters into 1/4 inch rounds and then brushed with butter. Cut them with a pizza cutter into wedges and rolled them up for cresent rolls. My family loved them! Let them rise in a pan before baking. So easy

Delicious Ham and Potato Soup

This is really a very excellent soup. My family raved about it and I will definately put this in my rotation for soups. It was very creamy and thick. I did add carrots, zuchinni, finely chopped and frozen peas to the vegtables. I also used turkey stock instead of the chicken boulillion and water, since it was the week after Christamas and my freezer was full of turkey stock. I was serving a crowd, so doubled the recipe. I did take some advice and added 1 cup of cheddar cheese to the milk mixture and crumbled crispy turkey bacon over the top of the soup when I served it. Yum!

Pizza Dough III

This was the best pizza dough I have ever made. I did take some of the suggestions and modified the recipe a bit. I used all purpose flour for a soft bread like consistency and conola oil instead of olive oil. I used 1/2C water, then added more water little by little to get the consistency that I wanted from the dough. I used a pizza stone, preheated, with corn meal on the stone. I also baked it at 475 degrees for 12-15 min. depending on the toppings. I tripled the recipe which worked great, and fed a croud of people. The men said that it was best pizza they had ever tasted.
