Homemade Black Bean Veggie Burgers

Really delicious flavor! I added approximately 1/2 cup of leftover brown rice (just to use it up) and used 1/2 cup ground oatmeal instead of the bread crumbs. I reduced the chili powder and cumin to 2 tsp and omitted the hot sauce since hubby doesn't like his food too spicy. This recipe is a keeper -- I will be making it again!

Chicken Lasagna Alfredo

I made this for a ladies dinner and it was a great hit--I had many requests for the recipe. The recipe doesn't need many modifications but I found the alfredo sauce a little too thick so I thinned it with 1/3 - 1/2 cup skim milk and I sprinkled Parmesian cheese in each layer as well. The whole process of making this takes some time (as with any lasagna) but the results are worth it! Really delicious!

Joelle's Famous Hot Crab and Artichoke Dip

I made this as an appetizer for Thanksgiving dinner and it was perfect. I wasn't sure if everyone attending would like the artichoke hearts so I left them out. Also, I baked it in a baking dish and then served it with a variety of crackers rather than the hollowed out loaf. Absolutely delicious! It was devoured in a very short time.

Roquefort Pear Salad

Great combination of flavors. Used sliced red onion instead of green onions and I skipped the avocado. I also used a good quality store bought balsamic vinagrette for the dressing. Everyone loved it!

Beef Tenderloin With Roasted Shallots

This recipe is absolutely delicious! It really isn't very difficult and most of it can be done ahead of time. It does take some time to roast the shallots and reduce the sauce, but it's a hands off process and you can be prepping the rest of your meal while it's being done. I did everything the morning of my dinner party (including searing the meat).I put it in the refrigerater, then took it out to come to room temperature a couple of hours before I put it in the oven. I served this with roasted fall vegetables and steamed asparagus. It received rave reviews from my guests!

Double Tomato Bruschetta

I love this recipe, and have made it many times. I regular tomatoes instead of roma, skip the sun dried tomatoes altogether and use either mozzarella or a sprinkle of parmesian. It is always a hit when entertaining!

Concord Grape Jelly

Good Recipe! I didn't have enough grapes to end up with 4 cups of juice so I cheated and added store bought grape juice (100% juice) to increase it to the right amount. It turned out perfectly jelled but I do think it's a little sweeter than I like.

Broiled Tilapia Parmesan

I thought this was so easy and very good. It was a little saltier than I usually like which is why the 4 star rating. But an excellent, quick meal when you don't have a lot of time for preparation.

Zucchini Cake II

This was a moist, delicious cake. I substituted 1/2 c. of applesauce for half of the oil to reduce the fat content and it turned out great. I needed more servings of cake so I baked it in a jelly roll pan for 25 minutes and then frosted it with cream cheese frosting. Very good! Will make this again.

New England Clam Chowder I

The flavor of this is everything you could want from clam chowder. My family loved it but all agreed that they prefer their chowder a little thicker. Next time I will add a thickener to give the broth more substance.

Red and Green Christmas Jalapeno Jelly

This recipe sounded like it had a lot of promise based on the reviews but I found it to be much too sweet! (even for jelly) I probably would have liked it more if I had left more of the seeds in because it wasn't spicy enough for my taste.
