Spicy Chipotle Turkey Burgers

BOWING IN WORSHIP TO THE AUTHOR: This is the best burger I have had in years. I have been watching my diet and lately am obsessed with ground turkey & chipotles - so this is a win-win for me. Absolutely delicious. I used a whole medium onion and two chipotles - just perfect. So easy to mix and cooked up quickly on the Foreman grill. These are just so superb. You really can get a lot of flavor out of turkey burgers. I'd be curious to know what the nutritional content is minus the cheese & hamburger buns - is it possible to post that? These are going to be a regular for me and I keep a food diary, so it would be great to know the exact nutrition (no bread and cheese for me!) Thanks again for an amazing recipe - these are truly life-changing.

Seasoned Turkey Burgers

These are delicious! I followed the recipe except I took other reviewers' advice and used Worschestire sauce. I did add an egg but might experiment with just using an egg white next time. Yes these are wet and sticky to handle when you mix it up but it all works out. I cooked these on my Foreman grill and they took about 7-8 minutes. Came out so yummy. Thanks so much for a great recipe! I will be making these all the time!

Mediterranean Lemon Chicken

This is delicious and so easy to make. I am a big fan of garlic so I doubled it and it wasn't overwhelming. I made this with boneless skinless breasts and it took about 40 minutes to cook. Thanks for a great recipe!

Sour Cream Chicken Enchiladas

I tried this recipe today and it turned out very well, considering I didn't have any green salsa. I had a medium salsa and a mild one that had lots of onions in it, so I combined those and the whole thing was delicious. Ditto on the cilantro comments - a little cilantro goes a long way, so use it sparingly. I halved the recipe as I was cooking for just me. I only used a small handful of cilantro and it was plenty. I took another reviewer's advice and removed the foil ten minutes into cooking, and that kept everything crisp. Great recipe, I will definitely add this to my regular rotation!!

Rich Chocolate Truffle Pie

This was delicious and so easy to make. The key to making not so rich is to use regular or graham pie crust, not chocolate-based. Also I used milk chocolate chips instead of semi-sweet. This was a big hit with my family at Thanksgiving and now I have a great stand-by to bring to parties & potlucks. Thanks so much for a delicious recipe!

Slow Cooker Lasagna

This is just so delicious, I make it every chance I get. I think the only catch, as other reviewers have mentioned, is that every crockpot is different. Mine is pretty big, oval-shaped. I cooked this on Low for 4 hours and it came out perfect, just getting crispy on the edges. I used some of the meat mixture for the top layer, otherwise that layer of noodles wouldn't have been moist. All of the noodles came out perfectly - no mushiness or chewiness. Sometimes I make my own sauce from scratch first and other times I just use jars of good-quality sauce, and it still comes out fantastic. I always add a couple extra garlic cloves and more basil. And I replaced the cottage cheese with Ricotta - it makes it more difficult to stir the cheese mixture, but I bet that would have been easier if I had let the cheese sit at room temperature for a bit. I have also made it with the cottage cheese and it's a tad blander that way, but still good. Maybe next time I will use both Ricotta and cottage cheese to see what happens. I also didn't add any salt - if I had, it would have been too salty. The cheese and pasta already have plenty. This is just a fun, yummy crockpot recipe that tastes even better the next day and leaves room for experimentation, if desired. Thanks so much for a great recipe!

Slow Cooker Beef Stew IV

This is fantastic. I followed everything exactly but at the end I added some salt, garlic salt and Beef Seasoning. That gave it an even nicer flavor. I think next time I will cut back on the meat and maybe use only 2 pounds, and add in more carrots and maybe other onion. I want to try putting in some celery too. All in all a fantastic recipe - this will now be my go-to Beef Stew recipe.

Easy Garlic Chicken

This was fantastic! I used Chicken Tenderloin and it was cooked perfectly after 40 minutes. Any longer and the topping would have started to burn. The chicken was nice and moist, fork-tender. The topping was a wee bit dry, though delicious, so I whipped up some chicken gravy to pour over the top and it's now perfect. I also made Uncle Ben's Garlic & Butter rice - garlic all the way, baby! This recipe is a new keeper for me, it's so easy to make and cleanup is a snap. I think I will make this my new go-to recipe when I need something in a pinch. Thanks so much for a delicious and budget-friendly recipe!

Pam's Dijon Chicken

This was absolutely delicious and soooo easy to make. I used chicken tenderloins instead of breasts, but didn't think to shorten the cooking tim so it overcooked a bit and came out a tad dry. So I whipped up some chicken gravy to drizzle over and it was superb. I will definitely be making this again and again. Thanks for a great recipe!

Garlic Bread Fantastique

This was fantastic. It's my new favorite recipe for garlic bread. I think the reason everyone says its so salty is because of the butter - perhaps if unsalted butter were used, there would be more control over the amount of salt. I used regular (salted) butter and just a big pinch of salt, and it was fine. I added an extra dollop of mayo and a squeeze of lemon juice as well. Overall, I loved this and will be making it a lot. Thanks for a great new recipe!!
