The Best Thai Coconut Soup

This is now my favorite chicken soup! I used homemade chicken stock and a ready-made lemongrass-ginger-cilantro-chile paste I found at the market which worked perfectly, but also mixed in a little mild red curry paste. I also added a few lime peels to the broth as it simmered (in lieu of kefir lime leaves) and used pre-cooked chicken breast instead of shrimp. I only made half the recipe this time -- will definitely be making this recipe again and again.

Kale Soup

I followed some of the suggestions on previous reviews, i.e. beef broth instead of water, added a can of diced tomatoes, switched out the hot Portuguese peppers with a jalapeno and used white kidney (cannellini) beans. I used linguica sausage, left out the pork chop and added a chopped carrot since I didn't have any cabbage. It was so good, I had two small bowls for dinner - the leftovers will make an awesome lunch tomorrow!

Carolina Style Low Carb Barbecue Sauce

I made this sauce last night with New Mexico chile powder and Xylitol (a natural low carb sweetener made from birch trees) instead of Splenda. I wasn't sure about the flavor since the vinegar was very strong, but WOW!! After the sauce sat overnight in the fridge, I basted my pressure cooked baby back ribs with it and then baked the ribs for another 15 minutes -- the ribs were perfectly cooked (only 32 minutes total!) and the sauce was fantastic! Tangy sweet with a nice kick! I will be making this sauce often - can't wait to try it on chicken!

Fluffy Pancakes

I used FF milk, added a tsp of vanilla and grated some fresh nutmeg and cinnamon into the dry mix -- they turned out just as advertised: tall, fluffy and so delicious! Great recipe!!

Tantalizingly Tangy Meatloaf

I tweaked it per some of the other reviews .. crushed pineapple instead of preserves, panko instead of bread crumbs, added a packet of Lipton's onion soup mix -- plus I also added about a half pound of ground pork to the pound of ground beef. The meatloaf was great and the topping was delicious -- will definitely make again.

Traditional Osso Buco

Since I've never made or eaten Osso Buco before, I have nothing to compare it to .. but, it's really delicious. The meat is so tender and the vegetables are perfectly cooked and seasoned. I made it last night for tonight since so many had said it is better the next day. I served it with orzo mixed with basil and grated fresh parmesan.

Blueberry Scones

I made these tonight, but with dried blueberries from Costco -- I liked that they stayed intact, but fresh berries would definitely be a bit sweeter. I added more flour, some white sugar and topped with an egg wash and turbino sugar per some of the reviews -- the texture turned out perfect. I'd been trying to find a recipe similar to Starbuck's blueberry scones and this is about as good as it gets!

Mongolian Beef and Spring Onions

I just made this and it was so delicious. Only changes I made was I added a drop of molasses to the sauce since I was using light brown sugar and I added a bit of cornstarch mixed with water at the end to thicken the sauce up. The hot oil made a total mess of my clean stovetop, but was well worth it -- will definitely make this again!

Butternut and Acorn Squash Soup

I just tried this tonight and made the following changes: added half a sugar pumpkin (one of the little pumpkins they sell for baking) to the squash mix, doubled the onion. added a chopped leek and sauteed them in a mixture of butter and olive oil instead of all butter, only used about 2TB Splenda brown sugar mix, about 6oz light cream cheese and added add'l spices (cayenne, cumin, curry, thyme and nutmeg) per another review.. and garnished with chopped cilantro. I used an immersion blender while adding almost a full quart of chicken stock until the soup was the perfect consistency -- it turned out wonderfully creamy and smooth with such amazing flavor! I will definitely make this again.

Broiled Tilapia Parmesan

Absolutely delicious .. I had never tried Tilapia before, and have already made this recipe twice in the last three weeks. I didn't have onion powder or celery salt, so I used celery seed, fresh minced onion and a little salt.

Hasty Chocolate Pudding
