I adore this recipe! I usually use only 3 tablespoons of butter, but otherwise, I follow the recipe as written. I've also found that for my family, it's closer to 4 servings than 2, as stated. It has a wonderful fluffy, buttery texture and flavor, and is fun to watch puff up in the oven. We serve it with powdered sugar and warm syrup.

Soft Oatmeal Cookies

These cookies were just what I was looking for! I wanted an oatmeal cookie recipe that was good enough to stand on its own without raisins or chocolate chips, but also tasted good when add-ins were included. I scooped mine using a small ice cream scoop onto parchment paper lined cookie sheets, and didn't bother pressing them down before baking. My cookies were done in exactly 7 minutes. I added mini chocolate chips to the last half of the batch, and must admit, they're my favorite of the two types. Great texture and flavor.

Italian Vegetable Soup

Wow! This soup is WONDERFUL! I was a little leary of using ground beef and so many canned vegetables, but the taste was spectacular! Even my picky, non-enthusiastic husband raved. The recipe didn't state whether to drain the corn and green beans, so I didn't, because I wanted it to be a little more soupy. I also simmered it with a lid on to keep in the moisture and was glad I did. Otherwise it would have been more of a thick stew. While preparing it, I had a hard time waiting for the vegetables to cook because it smelled and tasted SO GOOD, so I ended up having a bowl with some slightly crunchy veggies! Next time I might wait longer before adding the corn and beans, because the celery and carrots took longer to cook than I anticipated and I worried the beans may get too soggy. Fabulous recipe, I highly recommend it!

A-Number-1 Banana Cake

This cake was very moist and delicious. I frosted it with a cream cheese frosting which made it very yummy. Great way to use us extra bananas and buttermilk! I'll probably try it as banana bread and muffins too. I never thought my oven ran hot, but my cakes got a little overdone around the edge. Next time I'll start checking sooner, 30 minutes was too long for my oven.

Easy Ham and Noodles

This was merely "okay". It's tuna casserole made with ham - which I should have figured out from the ingredients. I ended up adding about another cup of cooked noodles, 2 cups didn't seem like nearly enough to cover the 9x9 dish, or for four servings for that matter. I also added peas - I can't imagine how completely blah it would have been without! It lacked flavor, and I didn't care for the texture of the chunks of ham with the noodles. Wouldn't make again.

Pumpkin Muffins I

Good muffins! I substituted applesauce for the oil and used regular flour with baking powder and salt instead of self rising flour. Next time I'll probably double the pumpkin pie spice.

Extra Easy Hummus

This was very easy, and considering it was my first time trying hummus, I thought it was pretty good. I think it would have worked much better in a food processor than in my blender, though. I used less salt and cumin because I was sharing it with my baby. He liked it too!

Whole Wheat Wraps

These really are great! I was pretty skeptical at first because of the simplicity of the whole recipe, but they turned out chewy and really good. They'd be great with some tuna or chicken salad inside, or sliced turkey and veggies. I ate melted cheese on one, ate several plain, and spread hummus on some. Try them, you'll like them!

Buttermilk Honey Wheat Bread

Oh man, I was disappointed with this recipe! After seeing the high ratings I was really excited to find a great whole wheat bread recipe, but I guess I should have READ the reviews, and taken the advice of adding more flour from the start! My dough was more like batter, which made it really hard to get out of the breadmaker and into my loaf pan! The flavor was okay, but "nothing to write home about" as my father would put it. I expected a really rich wheaty, honey flavor. I ended up throwing out the rest of the loaf after dinner.

Cheddar Bay Biscuits

These are the greatest! I thought for sure I'd done something wrong because the dough was so thick, but they turned out absolutely perfect. I didn't have onion or garlic powder so I omitted the salt and used onion and garlic salt. They were still wonderful. My husband even called his best friend to tell him I'd duplicated the biscuits from their "favorite restaurant". Now, if only I could replicate the shrimp scampi...

The first time I made this the dough turned out way too soft and I ended up adding more flour, but my husband REALLY loved the end results, so I made it again, and it turned out fine. I used pepperoni, onions, green peppers, mozzerella and ricotta cheese for the filling, and can't wait to try it with ham and pineapple!

Easy Chili I

My husband and I really liked this one! It has that extra kick! I used half the meat and twice the beans. Even though I added the beans at the wrong time, it still turned out fabulous! Will definitely make it again!
