Boilermaker Tailgate Chili

This is the best chili to make if you have lots of time, and lots of chili lovers. The leftovers keep well, and can even be served over hot dogs. I usually let this simmer for 4 hours, even though the kids start eating it after 2. Although I usually make a much simpler chili with very few ingredients, this recipe is our very favorite. This recipe is also very forgiving, and substitutions or additions can easily be made. I saw some reviews saying this is too spicy: please don't forget that the chili powder is the chili spices, and not chili pepper. They are not at all spicy. If you add 1/4 cup powdered chili you will have an extremely spicy chili (that's how much I use when I make 10lb of kimchi, which is extremely spicy)

Pickled Squash

This is a bit too sweet for my taste, but still good. To those reviewers that felt it came out mushy, the key is to only boil the brine. When it says to bring to a boil again: drain the vegetables, boil the liquid, spoon the vegetables into the jars, and pour the boiled liquid over them. This is a great method for cucumber pickles as well, because it allows the vegetables to release all their little bubbles, and then allows you to boil off any impurities that may spoil the final product.

Green Tomato and Bell Pepper Delight

I loved this recipe, but I did makangie ed alterations. I mixed red and green bell peppers, and used Visalia onions instead of green onions (it's all I had, people!) either way, turned out incredible. We seasoned with salt and pepper after cooking.

Juicy Roasted Chicken

Love it! Great quick recipe! I added rosemary, as I always do in my roasted chicken, but I think it actually would have been great without it. I used the drippings to pour over the breast meat, but wish i had made rice to drizzle over... There's always a next time! Thanks for the great oldschool, foolproof, quick, and tasty recipe!

Eggplant with Mushroom Stuffing

Good, but there was something about it that reminded me of stuffed mushrooms. I don't think I'll be making it again, but if you like stuffed mushrooms you will like this.

Quick and Easy Alfredo Sauce

I give this five stars for flavor (after mod.):***** I give it three stars for directions:*** I used fresh garlic instead of powder. The flavor was awesome! It took a very long time for in to thicken. I think this recipe should call for fresh parmesan, because the Kraft never really "melted" into the mixture. It left for a strange texture, although very tasty. Next time I will use 1/3 cup butter, 2 1/2 cups milk, FRESH parmesan, of course fresh garlic, and will remember to prepare to cook for quite some time.

Brown Sugar Meatloaf

I always make this. It is amazing. Of course, over time I have altered the amounts of the ingredients, and then I began just putting as much as I felt like, but either way - really really really yummy. No reason to make any other way. Good with just beef or with beef/pork mix. Also, even if you don't have the ginger it still comes out great. Extra sauce is helpful cause then it is extra yummy, but I noticed that when I do that the kids tend to want more sauce and I feel its too much sugar for dinner. Try this recipe out! It's very good.

Baked Spaghetti Corn

We liked this random recipe very much. This was food that looked funny but tasted good. I had a totally different feeling in my mouth from what my eyes were telling me. The kindergartener and the mini-toddler (10 mo.) both loved it, although they both had trouble finishing and eating it. I added about 3/4 cup of water - this was perfect. I also added pinch of salt/pepper/garlic & onion powder. And I baked it for 45 minutes at 450 - too hot for this recipe, but still tasted good. I think 375-400 would have been perfect.

Russian Pancakes - Blini

The batter was way too thin. I ended up having to call my mom to find out what I was doing wrong and I was told to cut the milk in half with water and add more flour, and to not worry so much about the first couple of blinis as they will normally ball up and get ruined. That helped me.

Pretty good recipe, but i think next time I will use a little less baking soda, and will put them in for more time. I took them out at the suggested time and they were still not done, I had to double the time.
