Simple Pasta Salad

I think the dressing you select is important. Because the one I chose (Newman's Italian dressing), wasn't soo vinegary for me, and I didn't like this dish too much.

Easy Peach Crisp II

Excellent, I used about 12 small/medium sized peaches (without skin) and 1/2 cup of granola. It seemed like the flour mixture would be too much but it was perfect. I'd like to reduce the sugar by 1/2 cup next time. I baked for 40 minutes.

BBQ Pork for Sandwiches

This is such a simple recipe with only 3 ingredients. We got the crock pot started late so I cooked it on High for 2 hours, and low for 2 hours and it turned out fine. The hardest part is shredding the pork. After we put it in the oven it came out a little crispy on the outside and moist underneath. Yum! We used Kraft BBQ sauce, not the highest quality sauce but still turned out super tasty.

Cucumber Sandwiches III

I just used regular sliced bread out of convenience. I took it to a potluck and it was the first dish to be finished off. If I have leftover spread I'll use it on sandwiches or crackers. It's easier to spread when soften or room temp.

Eggplant Burgers

I've never cooked with eggplants before. Most eggplant recipes take too long to prepare and cook. What I really like about this recipe is that it's incredibly fast to make. I'm not sure if I enjoyed it so much because of the condiments I put on it, regardless I'd made it again.

Butternut Squash Casserole

This was too sweet for us, I even reduced the amount of sugar. I'd suggest not having the crust on top. It tastes similar to pumpkin pie. I would make it again.

Antipasto Pasta Salad

This is a bomb pasta salad! I guess the secret is the Italian dressing. My fiance works outdoors so he's not able to microwave lunches so he requested pasta salad. This one appealed to me because it's more hearty than a side dish and also because of all the positive reviews, now I know why.

Chicken Pot Pie VIII

Very tasty! Because of time constraints, I used Marie Callender's frozen pie crust for the bottom crust. I made the dough recipe from this one, but cut the ingredients in half. Used Crisco instead of lard and put the dough in the freezer for about 2 hours. I did get extra filling and just froze that for the next pie.

Slow Cooker Chicken Taco Soup

I should have paid more attention and didn't realize this was for a larger slow cooker. I have a 5 qt, so I ran out of room once after I put in the first can of tomatoes. It's simple even for me to make and reminds me of chili.

My Best Clam Chowder

This was my first time making clam chowder and was worried I'd mess up on cooking in the flour, but I kept mixing and it was fine. I'd like more flavor, so added Old Bay and followed the suggestion to add bacon to it! I didn't have any red wine vinegar and I think it tasted great without it. Will definitely make this my go-to recipe for clam chowder!

I really didn't like this recipes, and it may be because I had to use Miracle Whip instead. It was pretty bad. I gave it 3 stars because the recipe does call for Mayonnaise.

Buttery Corn Bread
