Creamy Chicken and Broccoli Casserole

I had a hard time figuring out how I would rate this recipe. What I came up with is that it was way too much work to end up with a plain ole pasta and chicken dish. My husband and I both liked it and we will be eating the huge amount of leftovers. We liked the spice but thought it might need some lime juice to finish the flavor. I also like the sorta low-fat easy sauce in the recipe, which I might use as a base for other recipes. Here's my main problem with the recipe- I make casseroles to cut down on cooking steps, casseroles are supposed to cook in the oven. This recipe still has you cook everything and then combine it and broil. I may as well have just eaten it out of the bowl once I mixed it all together, since it was already hot and everything was fully cooked. I sprinkled it with bread crumbs to make it more crispy, which I liked.

Chicken Pot Pie IV

All I have to say is, it tasted like cream of chicken soup. I don't consider this cooking, and I wish I could find a better pot pie recipe on this site.

Flavorful Southern Fried Chicken

While this isn't the best fried chicken I've ever had, it was perfect for what I needed! I was out of eggs and cornstarch and buttermilk (what kind of cook am I?) so that pretty much ruled out all of the other recipes. We tossed them in bbq sauce and dipped in ranch as a football game appetizer. I double dipped between milk/crumb mixture as many reviewers suggested, and there was plenty of breading after fried. Yum!

Restaurant-Style Buffalo Chicken Wings

Yowza. So yummy. Good baked, great fried. Make sure you get good wing sauce and ranch. I'm not sure how 10 wings are supposed to equal 5 servings - as a main course for dinner I would say 8-10 per person. This one's going in the main recipe rotation!

Chicken and Spinach Ravioli

For having never made ravioli or pasta before, I thought this recipe was easy and super yummy. I added ricotta to the inside mixture and made the pasta with whole wheat flour. The recipe called for the right about of water for me (maybe a tsp extra than I needed, but I made up for it with flour). I drizzled the cooked pasta with olive oil, mozzarella and a teensy bit of seasoned salt. I will use this recipe again, maybe tweaked a little - but it's a great starting point.

Appetizer Chicken Kabobs

My husband said these tasted like we were at a restaurant! I left out the mushrooms and just did the onions and meat because aforementioned picky husband doesn't like them. We had them as a meal with couscous and brocolli. Yum!

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

SO good! But yes, complicated. Honestly, I didn't marinate the chicken...I was too hungry. I ended up sauteeing the chicken tenderloins in all of the ingredients of the marinade (minus jalapenos, don't like too spicy) and that was really tasty. It was a cold October night, so I didn't grill any of it-all indoors. I skipped the grilled veggies because I am not a fan of red peppers and I felt the salsa had plenty of onion, IMO. The sandwich was still Amazing. I don't know how anyone could get all those ingredient on there! I had to use toothpicks as it was. Some changes I'll make next time- the lime didn't really change the flavor of the mayo and I made too much, so it wasted the mayo. Also, my husband suggested I cut the chicken into smaller/thinner pieces because it was really thick with every bite. I will definitely be making this again.

Zucchini Bread II

Everyone that tried this (and that's a lot because I've made is so many times - about 10 loaves this summer- because of a bumper crop of zucchini's in the garden this year :) ) has said it tastes just like their mom's. Because I've made it so many times, I've made a few mistakes..one of which is cooking it too long (and another not long enough, ick). This bread is pretty sensitive to drying out - so keep an eye on it and take it out as soon as a toothpick comes out clean. I don't make it with raisins or nuts, don't like either in bread, and it's plenty tasty without it.

I love this recipe. No matter if it sits for several hours or just long enough to boil pasta it is still good. The quality of your olive oil and tomatoes matters big time. I add sauteed chicken to make it a main dish. Served cold, room temp or hot- all very good.

Tomato-Cream Sauce for Pasta

I used an immersion blender for mine because I was looking for a smooth sauce. It kind of had a weird consistency when done cooking, almost like the cream broke in the sauce and looked curdled. I wish I had let the tomato mixture simmer for longer and then added the cream at the very end. But the taste was faaaaantastic. I served it over cheese tortellini, and will make it again.

Fried Okra

Roasted Garlic

I LOVE roasted garlic, it's not a novel concept. But if we are rating this recipe, it is ALL wrong. The temp, the time, the seasoning. Cook for a lot longer at a little bit higher temp. I am at 6600' altitude and 1 hour didn't do it. It takes a good hour+ to have soft garlic. I used a ramekin with olive oil covered in foil - 40 m at 250 and 20 m at 300; still a little ripe. This recipe needs work.

Ham Croquettes

I grew up eating Salmon croquettes, so was intrigued when I saw this recipe. I think this is a good recipe, but the texture of the ham after being fried is kind of gooey and unappealing. The taste is super salty (and I might even call myself a sodium addict). I think I will try this next with chicken or something less salty as a protein. I served it with honey mustard, as someone previously suggested which cut the salty taste a bit. The recipe made about 25 balls for me (I flatten them kind of like small patties). I fried up half and froze the other half individually on a cookie sheet then stored them. We'll see how they keep.

Creamy Au Gratin Potatoes

The sauce BEFORE baking was to die for, I just wanted to use it as a fondue on bread, heck I was just eating it off a spoon. After baking though, it separated a little bit and didn't coat all of the potatoes. I was expecting more from this recipe, but I will try it again.

The Best Ever Chicken Nuggets

Debating between a 3 and 4 stars - this recipe isn't too salty, I find it kind of bland - I just need a little bit more complexity to the taste. My husband loves it though and requests it, he says it reminds him of Chick fil A's chicken nuggets. Every time I make it, I play with the spices and I'm still not happy with what turns out - but every once in a while to make hubby happy keeps it on the rotation.

Italian Sausage Soup with Tortellini

Oh so so very good and easy. Leftovers didn't last long...too bad - I can't wait to make it again! I plan on making this with fresh from the garden ingredients this summer - fresh basil, zucchini, onion and carrots...yum!

Delicious Egg Salad for Sandwiches

When looking for a recipe that would harken back to my mom's egg salad sandwhich, this one stood out and fit the bill perfectly! Not a culinary masterpiece obviously, I don't know what everyone is expecting with an egg sald, but this one is classic and hits the spot.

Chicken Stir-Fry

I wasn't sure about the chicken marinade, but it was so good in the stirfry! I marinated it all day and it was quite tasty. I added eggplant chunks and squash fresh from the garden, which was nice. I will definitely make this again!

Corn Tortilla Chips

I used my fry daddy and flour tortillas, used seasoned salt mildly after I pulled them out of the fryer. How is this not a recipe? I woudln't know how to cook chips, quite honestly. This was awesome, and buy "baked chips" if you want healthy, these are yummy.
