Grocery Store Frosting

I am a frosting person. Finding this recipe excited me. . . I am so sick of butter cream! I've used it twice now. The main thing that I learned the first time: CUT DOWN ON THE VANILLA. Also, it tastes better the next day. Overall, I'm pretty happy with it. It was fantastic on sugar cookies.

Roast Sticky Chicken-Rotisserie Style

This is infinitely better than I expected it to be. I can't believe that I made it! I've never cooked a whole chicken before (I wasted more than a decade as a vegetarian). It is perfect and so juicy. I do suggest using a thermometer, not just timing 5 hours. I can't imagine what would have happened if I kept it in that long! My birds were done in 2 hours. Also, I don't have a roasting pan, so I cooked them on cooling racks over casseroles. Crispy skin on all sides!

Slow-Cooker Pepper Steak

This is just not good. It tastes like nothing but tomatoes and is very flavorless otherwise. On top of that, the texture is terrible. I had my doubts about this recipes upon reading it, but was reassured by the overall positive reviews. I should have trusted my own judgement!

Chicken Satay

This was pretty good. I had some chicken that I didn't want to do the same boring stuff with and gave this a try. I only marinated for about 4 hours. All of the flavors were there, and I definitely did not think that the lemon was overwhelming. In fact, the lemon was extremely subtle. I boiled my marinade while the chicken was cooking for dipping, but it was not neccesary. It could have benefitted from a peanut sauce, but it was great on it's own. I served this chicken with lots of white rice.

Freezer Caramel Drizzle Pie

Oh. . this was so good. It was simple to prepare, but was a hit. It would probably be nice with a bit of chocolate. I think next time I will try to mix some chocolate sauce or cocoa into the cream cheese/whipped cream mixture.

Old Fashioned Coconut Cream Pie

I'm not going to give this one star because there is a chance that I did something wrong. I think that the directions weren't clear enough. It would not come to a boil on low while stirring constantly. By the time a couple bubbles gurgled to the top it was excessively thick. When I tried a little bit of it the texture was off and it tasted like nothing but flour. I dumped it was make something else for Easter dessert!

Bacon Mushroom Swiss Meatloaf

This was very tasty. My boyfriend (who doesn't like meatloaf) even made sandwiches with it the next day. I added a teaspoon of liquid smoke to make it a little bit more like a hamburger. I would recommend lots of extra mushrooms. I doubled the ammount and it still did not seem like enough.

Breakfast Upside Down Cake

This recipe is a keeper. I sliced the potatoes instead of dicing them. I used a silicone cake pan, so I had no sticking problems even without parchment paper. I think that next time I will try using frozen obrien potatoes.

Chicken Enchilada Casserole I

I won't say that this was terrible, because it isn't. It just does not have any real flavor. The canned soups overwhelm the whole thing. Save yourself some time and just eat the Cream of Celery soup, because that is all that this tastes like. I even tried to make it spicer by using diced jalapenos instead of green chiles and salsa con queso instead of the cheese spread. The upside was that the preparation was very simple. . . the downside is that we did not care for this recipe.

Bread and Celery Stuffing

Fantastic base recipe. I used french bread, a bit more broth, and added two beaten eggs (I like my stuffing to really stick together). I baked it the night before and then heated it up on the big day with some extra butter on top. It was great. Next time I may add some mushrooms.

Black Bean and Salsa Soup

This recipe was pretty good. I added a small can of diced chiles to it, but it still didn't seem quite spicy enough. I didn't love this, but it was good enough and easy enough to make again.

Portobello Sandwiches

I had been wanting to make something with portobellos for a while, but did not know what to season them with. . . . I didn't want them to taste like nothing but vinegar. I did start a small fire in the oven, though. I think that next time I will move the rack down a little bit. Despite the fact that the outsides were black the inside was still juicy. They were very good. . . . would probably be even better without the fire.

Grandma Winnie's Turkey Stuffing

I was not happy with this recipe at all. The only change I made initially was using vegetable stock instead of chicken. There was not enough liquid in the recipe. The stuffing didn't hold together at all. After I baked it and saw the bad results I fixed it up. I chopped it up and mixed in more egg, butter, and broth. I then put it in a smaller pan and re baked it. It was okay then.

First Class Bleu Cheese Salad
