Chicken and Gnocchi Soup

Used my homemade gnocchi and it was delicious! I think that you could use a lot of different veggies in this.

Penne with Sausage and Broccoli Rabe

I really liked this but a pasta like this needs a little fresh herbs! I added a bit of parsley and basil in the end. Really good! My kids are troopers in the spice department but a tablespoon of red pepper flakes would be way too much. Serve them at the table for people to add on their own.

Balsamic Bruschetta

Definitely needs to sit for a couple of hours especially if your tomatoes aren't fresh from your garden. I also chopped them and then threw them in a colander so that they we not so runny. Classic flavors, can't wait for my tomatoes to ripen!

Southern as You Can Get Collard Greens

Really salty. The condensed soup has your daily allotment of sodium, not to mention the ham hocks. The collards got tender before I was able to get any little pieces of meat off the hocks so my dish didn't look like the picture.

Pasta with Swiss Chard

Really simple and delicious. I have a lot of chard in the backyard and I wish I had used two bunches! Added a few more garlic cloves. Loved the lemon- not overpowering like I thought it would.

took longer to cook than the recipe stated. I thought the rule was NO salt while cooking beans. Seemed that was the long cooking time. Next time I will use water with all the seasonings. Used them in chili the next day and they finally softened.

Spinach and Sun-Dried Tomato Pasta

I too used oil packed sun dried tomatoes. I rinsed them to make them less oily. This was a delicious, light pasta that comes together very quickly.

Classic Goulash

Molasses Baked Chicken

Perfect chicken. I ended up buying an already cut up whole chicken as it was the same price as the whole and it was about 5 lbs. I roasted it like the recipe says for 30 minutes then I basted the chicken every 10 minutes for 30 minutes. You wouldn't believe the beautiful color, the moist chicken and it registered 180 on the dot after resting for five minutes! This is a keeper!

Mexican Bean and Rice Salad

I think this salad is SO great. You can add or subtract items based on your pantry and it will always work. Like I was out of corn one day! If you had the wonderful opportunity to have Galllo Y pinto in costa rica for Breakfast, it is very similar to this dish. If you have any left overs try it with scrambled eggs in the morning!
