Banana Bread VIII

I thought this was okay but I wouldn't make it again. The texture is moist but almost gummy. I found it too sweet and I think the sugar masks the banana flavor.

I combined the dusting sugar with li hing powder, 3 Tablespoons sugar to 1 teaspoon li hing powder. These taste very good! I only rate this a 4 because as written, it is difficult to combine the ingredients. In the future I will add all liquid ingredients to the egg and sugar mixture and then add the liquid mixture to the dry mixture. This is a soft dough, like thick/fluffy pancake batter. Rather than handling the dough I found it easier to scoop some dough with a spoon and push it into the heated oil with an oiled finger.

Chocolate Zucchini Cake III

Good cake. It was fluffy but the top was a bit crusty, almost like a brownie. Sweet enough to be enjoyed without frosting.

Queso Dip

This was very delicious. For smooth results, I added a few tablespoons of cheese at a time and whisked constantly. I didn't have salsa so I improvised with an equal amount of chopped red onion and sriracha.

Carrot and Ginger Soup

Fantastic flavor and luxurious, velvety texture. I did add a vegetable bouillon cube when I added the water. I didn't use the optional cream either so this was suitable for vegans. Everyone loved this soup and I'll make it again. Thanks so much.

Frosted Cranberries

Beautiful presentation. I used corn syrup instead of egg white as someone suggested to make these suitable for vegans and people with egg allergies. They are delicious so if you like cranberries try them.

Salty Dog I

Simple yet so delicious. I had never had a salty dog with vodka. I used freshly squeezed grapefruit juice and I didn't measure the salt, just added enough to taste. I can't even taste the alcohol, dangerous.

Carrot Muffins

These muffins are delicious! They are moist and tender with a mild flavor. I did make a couple of substitutions to match what I had on hand and everything still turned out wonderfully. We served them with honey.

Vanilla - Chocolate Powdered Sugar Frosting

I used plain soy milk instead of dairy milk but couldn't taste a difference. This was easy and incredibly delicious. I frosted a ginger-cranberry cake. I will use this recipe again.

Cranberry Nut Bread I

Delicious and moist. I like this a lot. I had to omit the walnuts because I didn't have them and I replaced the vegetable oil with olive oil. I used 1/2 of a banana mashed with 1/2 teaspoon of baking powder to replace the egg and make this a vegan bread. My substitution worked well so I recommend this for anyone with an egg allergy too.

Simple Orange Glaze

Pasta with Yogurt Sauce

This dish was fantastic. I used labneh in place of plain yogurt and the result was very creamy. I served the sauce with sprouted grain pasta and stirred some fresh spinach into the sauce just before serving. I also sprinkled sumac over the plated pasta. This is something we will make often. Thanks!

Quick and Easy Pizza Crust

We used almost all whole wheat flour and only 3/4 cup of all purpose flour but the result was still delicious. I was surprised that our pizza wasn't tough from all the wheat flour. Out of habit, I let the dough rise for 30 minutes. We will use this recipe again. Thank you.

Creamy Vegan Hot Cocoa

Very delicious and it's a convenient recipe to have for the times I'm out of non-dairy milks. I added a little cinnamon schnapps for a kick. I will make this again but when I have non-dairy milk around, I will use it instead of water for the extra vitamins. Thanks!

Sweet Potato Biscuits

I agree with others that the recipe calls for too much salt. I used a scant 1/2 teaspoon and it was still a little too much. Other than that, I really liked these and will make them again. I was out of sugar and used honey and used soy milk instead of dairy milk.
