Real Italian Calzones

Incredible!! The dough was crispy and tasted wonderful. These are large calzones - although I added a lot of stuffing to mine. I followed the dough recipe exactly and stuffed them with roasted chicken, broccoli, sauteed red onion and garlic, basil, mozzarella, parmesan, romano and cheddar. Delicious!! We may have these twice this week as I am already dreaming up new filling combos. Thanks!!

Cha Cha's White Chicken Chili

Very, very good. This chili definitely has some heat to it. I add some of the ingredients - cayenne pepper and jalapenos, slowly to control the heat.

Turkey Breast with Gravy

Crazy good! I thought my husband was going to lick his plate to finish off the last drops of gravy. He asked me to roast a turkey breast last night and all of the turkey breasts at the store were frozen solid. So, I used a 5 lb whole fryer chicken. I cut the rub in half due to the small chicken. I rubbed the chicken with a little bit of olive oil prior to adding the rub and I did put a slit over each side of the breast and put a pat of butter inside. I used a can of chicken broth instead of water and bouillon although I don't think that makes any big difference. Finally, I thickened the gravy with 2 TB of flour whisked into a cup of milk. Don't mess with the herbs/spices - they are perfect!! I can't wait to try this with turkey and I can tell you that this will be on my table come Thanksgiving!!

Insanely Amazing Jalapeno Cheese Dip

Really, really, really good! I did use half mayo and half sour cream and I used the light variety of each. I baked it in a dish instead of a bread bowl but would love to try the bread bowl next time. Delicious!!

Perfect Turkey

So delicious. One of my guests for T-day dinner ate 4 servings! I did change one thing that I think made my turkey breast extra juicy. Instead of melting the butter I cut it into about 1/4 inch slices. I cut small slits into the turkey skin on the breast and inserted a slice of butter into each. This really kept the breast very moist while it cooked. This is my new go-to turkey recipes. Thanks!

Cheesy Potato and Corn Chowder

This is wonderful, I really wasn't expecting to love it so much. As suggested by others I used 50% half and half and 50% milk (skim). I pan fried about 6 slices of bacon and used the fat to cook the vegetables. I used 1/2 carrots and 1/2 celery. Instead of Mexican Velveeta (yuck) I used a Mexican blend cheese and added a few dashes of hot sauce. This is amazing paired with beer bread on a cold day.

Black Bean and Corn Salad II

OMG - really, really delicious!! I doubled this recipe to take to a cookout. I used only 1/3 cup oil (as stated in this recipe the oil would be WAY too much) and 1/3 cup fresh lime juice. I used 8 ears of fresh corn and 3 cans of black beans. I also used red onion very finely diced in place of the green onion. I kept the salt to 1 tsp despite doubling the recipe. Left out the cilantro. Finally, I took several reviewers' suggestions to increase the garlic (used 4 cloves), add 1 tsp cumin and to use halved grape tomatoes. It was beautiful, healthy and got rave reviews. The avocado does get squishy and brown as do the tomatoes so it is best to make this the day you will serve it.

Easy and Elegant Pork Tenderloin

LOVE. I made this recipe and also made the sauce from the "Pork Tenderloin with Dijon Marsala sauce" and this tasted like a meal I'd pay top dollar for in a restaurant. I did rub the tenderloin with olive oil and then coat it with the bread crumbs. I also browned it in a little bit of butter. I will use this recipe again and again.

Angela's Awesome Enchiladas

These were awesome! My husband and I both loved them. We used light ingredients where possible to keep the fat/calorie levels in check (98% fat free soup/lower calorie tortillas/skim milk cheese/light sour cream) and I did bake the chicken instead of boiling it but otherwise made the recipe exactly as called for. We used Old El Paso Hot Enchilada sauce and it really gave it a nice kick. This recipe is perfect and we will make it many more times!

Easy Slow Cooker French Dip

This is fantastic! I butter the inside of my hoagie roll and put it under the broiler to make it toasty and then melt some provolone on top of the meat. Yum!

Slow-Cooked German Short Ribs

These are fabulous!! My picky husband requested them for our Christmas Eve meal, in place of my ham which he really loves. They had a great hint of spice/heat that really made them delicious. I only made 1.5 lbs of ribs but still made the same amount of sauce and was glad that I did. We'll make these again and again.

Garlic-Lemon Double Stuffed Chicken

This is a truly delicious recipe. Great if you're on a low carb diet. I just substituted grated parmesan cheese for the bread crumbs and it tasted fabulous. It certainly isn't a recipe that fits with a low fat diet though!

Slow Cooker Carnitas

I have made this several times. It is so easy to serve along with toppings to build your own burritos. Great for visitors or we also did this for Super Bowl. A real hit. I do double the spices and cut the meat into chunks (about 2-3 inches square) so that they really get coated in the seasoning. Also cut the salt in half, you really don't need that much. Delicious!

Creamy Twice-Baked Potatoes
